No Peek Chicken and Rice Casserole

Easy but delicious flavored casserole.

  • 9 x 13 casserole dish
  • large mixing bowl


  • 1 1/2 lbs boneless, skinless chicken breasts cut into thin cutlets
  • 1 (10.5oz) can cream of celery soup
  • 1 (10.5oz) can cream of chicken soup
  • 1 package lipton onion soup mix
  • 1 1/2 cups water
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup white long grain rice (uncooked)
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp paprika
  • dried or fresh chopped parsley, for garnish


  • Preheat oven to 350 degrees. Spray a 9 x 13 casserole dish with non-stick cooking spray.
  • Lay chicken in prepared casserole dish in an even layer.
  • In a large bowl whisk together cream of soups, onion soup mix, water, rice, black pepper, garlic powder, onion powder, and paprika until well combined.
  • Pour mixture over chicken to cover and spread evenly.
  • Cover tightly with foil.
  • Bake in preheated oven for 1 1/2 hours.
  • Remove foil and check for doneness of chicken and rice.
  • Sprinkle with shredded cheese. Place back in oven for 5 minutes or so to melt cheese. Sprinkle with parsley.
