Let's make Asian inspired dumpling smash
0:04
tacos. You guys, this one rocks. I saw
0:08
this all over social media and I am
0:11
like, I need to make this version. I've
0:13
made regular smash tacos before, but not
0:16
the Asian version, and I love a good
0:19
dumpling. So, the first thing we're
0:21
going to do is make that sauce that you
0:23
can either drizzle on your taco or you
0:25
can dunk your taco into it. It's that
0:27
delicious. And we want to make that
0:28
sauce first so that we're not pouring it
0:31
onto a cold taco afterwards. All right,
0:34
you guys. Let's get started. I got some
0:36
delicious ingredients right here. We're
0:38
going to put them into a bowl and whisk
0:39
it all up.
0:41
First thing, three tablespoons of soy
0:44
sauce. I'm using the low sodium. We'll
0:48
control the salt.
0:51
I love soy sauce and Asian food,
0:54
especially with my dumplings.
0:57
We're going to be putting in two
0:58
teaspoons of rice vinegar.
1:05
I think that was it. I might have to put
1:07
that back in.
1:10
That was a little fast, you guys.
1:14
Now, we're going to be using a chili
1:16
oil. This is very optional. You do not
1:18
have to do this step. Instead of this,
1:21
you can actually put some red pepper
1:23
flakes in here and control the heat that
1:25
way or just leave it out all together.
1:27
But my husband picked this up right here
1:29
and wanted to try it. It's chili crisp
1:31
oil.
1:35
And we're just going to put very little
1:37
in there.
1:39
A look at that. Oh, it smells good.
1:43
Little spicy though, but it smells like
1:45
something you would definitely dunk a
1:46
dumpling in. That's for sure. So, let's
1:48
see what that amount right there.
1:50
>> We'll start with that.
1:51
>> We'll start with that.
1:53
>> I need that.
1:54
>> He can add more on his, you know, sauce
1:57
there if he needs it.
2:00
>> That's for sure. All right. Now, if you
2:03
take half a lime and you squeeze it, and
2:06
that's what we're going to add to the
2:07
bowl here. And I got some right here.
2:09
Looks like about a teaspoon.
2:12
And then we're going to add in one
2:14
teaspoon of sugar. That'll help with
2:16
that vinegar
2:19
and the lime juice that we're putting in
2:21
there. And then we're going to add in
2:23
two teaspoons of some sesame oil. Now,
2:28
this is extra virgin.
2:30
And we're just going to go in one and
2:32
two. Get you a whisk. Blend it together.
2:36
Now, you can double up on this recipe if
2:38
you want. We're making four tacos today,
2:41
and this sauce will be enough for those.
2:44
Now we can set this aside. Let's start
2:46
making the tacos.
2:49
All right, we got to give an Asian flare
2:51
to the dumpling mixture also. That
2:53
helps. I'm going to be using one pound
2:56
of fresh ground pork. Now, it comes like
2:59
that and it looks like ground beef, but
3:01
it's pork. You don't want to get the
3:03
pork sausage, okay? Don't do that. No
3:06
mild pork sausage, no Jimmy Dean, just
3:09
regular ground pork.
3:13
And you need one pound. That will give
3:15
us the four tacos that we're going to
3:16
make. We're going to mince in some fresh
3:19
ginger. Actually, we're going to grate
3:22
it in. You want about two teaspoons.
3:26
Oh, it smells good. Oh, man.
3:31
That looks good right there. So, we're
3:33
going to get rid of that right into
3:36
our ground pork. We're going to mince up
3:38
two teaspoon of garlic.
3:42
I'm wanting that fresh garlic.
3:46
So, we're going to take off that outer
3:48
layer and then we'll mince it up.
3:53
Oh, yeah. Garlic and ginger. M. We're
3:56
going to add in some green onions. Now,
3:58
I've just chopped these up. Got about a
4:01
couple tablespoons.
4:03
We're going to put in a/4 teaspoon of
4:05
salt, which I'm just going to estimate
4:07
here. There we go. 1/4 teaspoon black
4:12
pepper.
4:15
We're going to add in 1 and 1/2
4:17
tablespoons of soy sauce.
4:24
All those flavors. I can smell them all.
4:27
Smells delicious. And then one
4:29
tablespoon of our toasted sesame oil.
4:35
Let me get it on there. There we go. I
4:37
have one of those adjustable spoons.
4:42
All right, I'm going to put my glove on.
4:44
I'm going to mix this all together. All
4:46
right, mix well to combine.
4:49
Now, we just want to mix to make sure
4:50
everything is incorporated. Don't over
4:52
mix. We don't want to break it too much.
4:56
Lock in those beautiful flavors in
4:58
there, which I can definitely smell.
5:00
Smells delicious. Reminds me of the
5:03
dumplings. That's what it's supposed to
5:05
be. Press it down into your bowl. Nice
5:08
and even.
5:10
Get a nice form down there. Cuz what
5:13
we're going to do is split this into
5:15
four equal portions.
5:19
That looks good right there. Did y'all
5:21
go for a spinning ride there?
5:24
All right. So, just take your hand.
5:26
We're going to divide it in half
5:29
as equal as you can. And then divide
5:32
that again. So, you should have four
5:34
portions that we're going to work with.
5:38
There we are. Look at that. See those
5:41
green onions in there? Here's the trick,
5:43
you guys. We're not going to be rolling
5:44
these with wonton wrappers.
5:47
We're going to be using tortillas. These
5:49
are the 6 in regular standard size flour
5:52
tortillas. And what's great about this
5:54
is they're only 100 calories each. We're
5:57
keeping this low calorie today. Did I
6:00
tell you that? All right. You need four
6:02
of them for this recipe.
6:04
All right. Just lay your tortillas out
6:06
on a clean work surface.
6:11
And then we are going to take that
6:14
mixture, take one portion of it, which
6:16
is one quarter of it, and take it out.
6:20
We're going to place it right in the
6:22
middle. Now, what you want to do is
6:24
flatten it out. Go all the way to the
6:27
edges.
6:29
This will shrink a little bit. You want
6:32
to make sure you have enough filling on
6:35
the whole thing. Squeeze it out there.
6:39
Make sure it's nice and even.
6:42
Making smashed tacos is not new to me.
6:45
I've made them before for you guys. Just
6:47
the standard like hamburger ones. So, I
6:50
knew this was going to be a good one and
6:51
I had to try it. All right. Just like
6:54
that. We're going to do the other three.
6:59
Y'all know who's here.
7:02
That's Thomas, my husband. He's behind
7:04
the camera.
7:07
When he knew I was going to make this,
7:08
he's like, "Oh, yeah. You better make
7:10
it."
7:13
He's excited for this one.
7:17
Y'all ready? Let's cook these up because
7:20
we've got the sauce and I've also got
7:22
something really good going on to it
7:24
also. Come back. All right. For this
7:27
part of the recipe, you're going to need
7:29
a skillet,
7:31
a long skillet, or you can use two
7:33
skillets, and that way you can cook more
7:34
of them at the same time. I'm going to
7:36
be using my griddle cuz I can get four
7:38
of those on here, I'm pretty sure. We're
7:40
going to heat this up to about 350°,
7:42
which is a mediumigh heat. We're going
7:44
to add a little cooking oil. I'm using
7:46
avocado oil, or you can use an olive
7:48
oil. I'm just going to spray some on
7:49
top. Just a little bit.
7:52
That's it. We're going to get that nice
7:54
and hot. We're going to get a spatula
7:56
here. Go underneath one of our
8:00
dumplings here.
8:03
Now, once it's nice and hot, we're going
8:05
to wait because we want it to start
8:06
cooking right away. You want to flip it
8:09
over so that meat side is down cooking
8:13
first. Okay. And these won't take very
8:16
long.
8:18
All right. Let's lay them down.
8:21
Ah, hear that sizzle.
8:26
Now, if you want a griddle, I have one
8:28
on my recipe blog, kathernplates.com.
8:30
Just go to my store items, and you can
8:32
find all the items that I use in my
8:35
channel here.
8:37
You can find the cookbooks there, too.
8:39
But this one's not in a cookbook yet, as
8:40
this is a new recipe for us.
8:44
All
8:46
right, let them sit there until that
8:48
pork is cooked all the way through and
8:51
it's nice and golden brown on the
8:52
bottom. And then we're going to finish
8:54
these up. All right, this one's ready to
8:56
go. I've already checked it.
9:01
One minute on the back side on the
9:03
tortilla side of it. We'll cook it one
9:05
more minute to kind of crisp up the
9:07
tortilla. Look at that. Doesn't that
9:09
look good? You want to make sure that
9:11
your pork is cooked all the way through.
9:13
Just like that. Looks like a little
9:14
hamburger patty, huh? Yep.
9:19
Oh, those smell delicious.
9:21
Now, as long as your pork is cooked for
9:23
145 to 160°,
9:26
you're good to go. And these all reach
9:28
that temperature.
9:31
Here's our dumpling smash taco. Let's
9:35
jazz it up. I've got some co-law here.
9:38
I'm going to put right in the center.
9:41
Give it a nice crunch. You could put
9:43
some shredded cabbage and carrot if you
9:45
want to do that. I've got some fresh
9:48
cilantro. You know that's going on.
9:52
I never knew what cilantro was till I
9:53
met my husband.
9:55
>> You're welcome.
9:57
>> All right, we're going to put some green
9:58
onion across it.
10:03
Y'all look at that sauce.
10:06
Right, we're drizzling it on.
10:12
Mhm.
10:16
Fold it like a taco.
10:19
And let's go in for a bite.
10:33
You guys, this is 100%
10:37
delicious. It tastes just like a
10:41
dumpling.
10:51
And that sauce is not spicy at all. We
10:54
should have put some more chili oil in
10:55
there cuz
10:56
>> Don't worry, I will.
10:59
>> He will. All right, you guys. Make sure
11:02
you jazz it up with your cilantro, your
11:04
co-law mix, and green onions. And make
11:07
that sauce. Make lots of that sauce.
11:11
Going forward. I'm going to make it
11:13
double.
11:15
Right, we got three more to make. All
11:17
right, you guys. Make sure you give us a
11:19
thumbs up on this recipe. Comment down
