Hello everyone. Welcome back to
0:01
Katherine's Plates. Today I'm going to
0:04
show you how to make a Big Mac pasta
0:07
salad. It's cool. It's refreshing. It's
0:10
creamy. It's got all the flavors that
0:13
you love in a Big Mac. We're
0:16
substituting the pasta for the buns. And
0:19
then we're not going to forget that
0:22
dreamy secret sauce. First thing I got
0:25
going on is I got a pot of water coming
0:26
to a boil behind me. We'll let that
0:28
happen while we get other stuff going
0:31
on. Now, I'm just going to be browning
0:34
up one pound of ground beef in just a
0:38
small skillet. It doesn't have to be
0:40
anything major or anything like that.
0:42
So, just break it up and we're going to
0:45
brown it up. And while that's happening,
0:48
we're just going to come over here and
0:50
get that onion. So, we're going to cook
0:52
it down. So, you're not even going to
0:53
know it's there. It's just going to
0:55
absorb flavors. So, we're going to peel
0:57
off that outer layer. We're going to
0:58
take off both ends. Just toss those over
1:00
there into your sink. Don't hit your dog
1:02
in the head on the way over there
1:05
because she's after everything right
1:07
now. A Big Mac.
1:11
M. We're going to get it all in there.
1:14
The hamburger, pickles, onion, the
1:17
sauce, the cheese. Yeah. We're going to
1:20
dice up the onion. Keep it nice and
1:22
small cuz that's how they come on a Big
1:23
Mac. So, we're going to cut the onion in
1:26
half. And then I'm going to run my knife
1:28
through the onion following the lines of
1:30
it or as close that you can get to the
1:32
lines.
1:34
Y'all, people on my channel really,
1:39
they're like, "Why do you show us how to
1:41
chop an onion? Everybody knows how to
1:43
chop an onion."
1:45
Well, not everybody because I have new
1:47
people all the time that go they don't
1:49
know the difference between a dice and a
1:50
chop and they're glad that I show them
1:52
how to do it correctly and get even
1:54
pieces. So, I'm going to keep doing it.
1:59
So, what I did was I turned the onion
2:02
around about a quarter of the way and
2:04
then I'm just going to run my knife
2:05
through it. Look at that. You guys see
2:08
the dices? There we go. It'll add some
2:10
texture. It'll bulk up your salad.
2:14
onions do that. Let's cook our pasta.
2:17
Now, I've already had the water going
2:19
while I was chopping up my onions and
2:20
everything. So, it came to a boil.
2:25
What we're going to do is add in 12 oz
2:28
of rotini pasta. Now, this came in a one
2:32
lb size. So, what I'm going to do is
2:34
just cook the whole thing and then I'm
2:36
going to estimate 12 oz of fully cooked
2:38
pasta at the end and save the rest of it
2:40
for something else. All right. So, add
2:42
that to your water.
2:44
These are what rotini look like right
2:46
here. And you know, actually, you can
2:48
use any type of pasta for this recipe
2:50
that you want. It's a pasta salad.
2:53
All right, we're going to add it in.
2:57
And actually, I meant to salt my water.
3:02
We'll go ahead and do that now. About
3:04
half a tablespoon.
3:07
We're going to stir this up. We're going
3:09
to cook it per the directions on the
3:10
back of the package.
3:13
actually on the side there.
3:16
And it's 9 to 12 minutes. And we want to
3:20
make sure that it's nice and tender.
3:24
We'll start with the 9 minutes and go
3:26
from there. And then we'll test it out.
3:29
While we are cooking up the ground beef,
3:31
I'm going to try to keep it in big
3:33
pieces. That way we can see it in the
3:36
pasta salad. I don't want to grind it
3:38
down
3:41
in little bitty pieces. And then once
3:43
the ground beef is all browned up, we'll
3:45
take some paper towels. We'll drain out
3:47
any excess grease. See how I got some
3:50
big pieces in there? That's what I want.
3:54
Once your ground beef is just about
3:57
cooked, I'm just going to push it all
3:58
off to the side. We're going to take
4:00
some paper towels.
4:02
We'll just push it into the meat.
4:05
you get some of that excess grease out
4:08
cuz you don't want excess grease in your
4:10
pasta salad.
4:12
We're going to add in our onion.
4:19
This is the only opportunity to season
4:21
up your ground beef. So, go ahead and do
4:23
that now. So, I'm going to take some
4:25
garlic powder. I'm going to put in about
4:28
half a teaspoon
4:32
black pepper.
4:36
about 1/4 teaspoon of salt. I don't want
4:39
to overpower it. We're going to cook the
4:41
onion down into the ground beef for a
4:43
few minutes until they're nice and soft.
4:48
Once the ground beef and the onion are
4:51
cooked, we're going to add it to a large
4:54
mixing bowl.
4:56
That way, we can cool it down. And this
4:59
is where the pasta salad was going to
5:02
start taking effect here.
5:06
There we go. Now, we're going to set
5:09
this bowl off to the side and let it
5:12
cool down while we're stirring it every
5:14
now and then.
5:16
And then we're going to go back here. My
5:18
pasta is done. So, I'm going to drain
5:21
the pasta out. I'm going to run cold
5:23
water all over it until it cools the
5:26
pasta down. Sometimes it helps if you
5:28
put some ice cubes into it while you're
5:32
cooling down your pasta.
5:35
It'll stop the cooking process and make
5:37
the salad nice, cool, and refreshing.
5:40
Just keep stirring it around. Get those
5:42
ice cubes moving around.
5:45
The pasta has cooled it down. I've taken
5:47
out any excess ice cubes out of there.
5:49
Now, I want to dry the pasta off just a
5:52
little bit. So, I'm just going to take
5:53
some paper towels. I'm just going to
5:54
blot the pasta
5:58
and get all that excess water off that I
6:00
can
6:01
without smooshing my pasta.
6:04
Y'all, it is so tender. Make sure it's
6:07
nice and tender.
6:10
Yep.
6:12
Okay, I've got my pasta setting right
6:14
here. I've got the ground beef and onion
6:17
cooling down right here. We just move it
6:19
around a little bit. And then in a
6:21
medium bowl, we're going to make that
6:23
delicious secret sauce dressing that
6:27
will pull this all together. Plus, we
6:29
have some toppings that we're going to
6:31
put on top to pull it all together. All
6:34
right. So, in the dressing, we're going
6:36
to add half a cup of mayonnaise.
6:40
I'm using this olive oil mayonnaise.
6:43
We're going to add that in.
6:45
And then we're going to add in 1/4 cup
6:48
of ketchup, which we use the what is
6:53
this? The no sugar added ketchup.
7:02
Two tablespoons
7:04
yellow mustard.
7:07
I'm estimating
7:09
one and two. You can adjust the flavors
7:13
as we go.
7:15
There we go. And then we're going to add
7:17
in some pickle juice.
7:20
Make sure it's dill. I don't want to
7:22
overspill, so I'm going to go in with
7:24
the uh measuring spoon here.
7:29
Two tablespoons.
7:32
Here we go. Hang on to your pickles.
7:35
We're going to need them. We're going to
7:37
add in some smoked paprika.
7:45
This is our secret sauce.
7:48
What do you think? I know what theirs
7:49
is.
7:51
Garlic powder, of course. And then we're
7:54
going to add in some black pepper.
8:01
And I forgot my salt. Salt. Salt. Salt.
8:09
There we go. I'm going to get a whisk.
8:11
We're going to blend that together. If
8:13
you want to bring something different to
8:14
a potluck and surprise people, bring
8:17
this one. You won't be bringing the same
8:19
average ordinary pasta salad everybody
8:22
else brings, right?
8:24
Oh, look at the color of that. Does that
8:26
not look like a Big Mac secret sauce?
8:33
All right. This is where you're going to
8:34
want to give it a try.
8:37
Make sure everyone's going to be happy.
8:39
Let's give it a try.
8:45
Oh my gosh, that's delicious.
8:48
I love the little tang of it. And
8:51
there's many things over here that could
8:53
have done that. And that's delicious.
8:56
That's going to pull everything
8:57
together.
8:58
To the cooled down ground beef and
9:00
onion, we're going to add in our drained
9:03
cooled down pasta.
9:08
I'm putting that. We're going to put it
9:10
all in. I still I already pulled out 4
9:13
oz of it.
9:15
That's a good amount right there. We're
9:18
going to add in the sauce.
9:24
All right, you guys. Look at this. We
9:26
got some pickles here. We're going to
9:28
slice up. Now, these are dill pickles.
9:31
These are spears. So, I'm going to go
9:33
down cut these
9:35
pretty big so people can see them.
9:39
And we'll just chop those up. All right,
9:42
let's put that in.
9:47
Got some cheddar cheese. I'm just going
9:49
to grate it on in. I'm probably going to
9:52
put in half a cup, though.
9:55
There we go.
9:58
I have a secret ingredient.
10:01
French's fried onions.
10:03
Put those in.
10:06
about half a cup. Grab your mixing
10:09
spoon. Blend this all together. I'm
10:11
gonna show you how we're going to serve
10:12
this up because we're not done yet.
10:16
Okay. Is that looking good, you guys?
10:18
Look at that.
10:20
Doesn't that look beautiful? Big Mac
10:22
pasta salad. Now,
10:25
you know Big Mac has that lettuce on it.
10:27
So, I've got shredded iceberg lettuce,
10:30
and I'm going to scoop some of this on
10:32
top. Put an extra little topping on
10:34
there. Got to give it a try for you.
10:37
Some French's fried onions
10:41
right on top.
10:44
And you need a fork.
10:47
All right, let's give this a try for
10:48
you.
10:59
If there's one thing I would do
11:00
different, I would double up on that
11:03
secret sauce
11:05
cuz it is delicious.
11:14
It tastes like a Big Mac.
11:17
All right, you guys. What do you think
11:18
of my recipe? Big Mac pasta salad.
11:21
Perfect for spring and summer, potlucks,
11:24
you got barbecues, picnics, whatever you
11:27
want to bring this to. Now, you can take
11:30
that iceberg lettuce, you can just go
11:32
ahead and mix it all in if you know it's
11:33
going to go quickly and just do it that
11:35
way. That way, you don't have to prep it
11:38
while you're somewhere. But if you're at
11:39
home, prep it yourself like just like
11:42
that. Add some of those onions. They are
11:44
delicious.
11:47
Mhm. M always delicious on those French
11:50
fried onions. All right, you guys.
11:53
Thumbs up on this one. Comment down
11:54
below. Make sure you hype my video, like
11:57
my videos, share the video, whatever it
11:59
takes to push this one out there. Okay,
12:02
you guys. I'll see y'all on the next
12:04
episode. Bye.
12:07
Make you a Big Mac pasta salad.
