welcome back everyone to Catherine's
0:02
Plates today
0:05
is peach day i am going to show you how
0:08
to make a summertime peach crisp you can
0:12
serve this up with a nice bowl of ice
0:15
cream or even some homemade whipped
0:18
topping i've got fresh peaches here i'm
0:21
going to show you how we're going to get
0:22
these peeled and sliced up we're going
0:25
to want to peel the peaches and get the
0:27
skin off because you don't really want
0:29
that in a peach crisp now the first step
0:31
is to blanch your peaches and that will
0:34
make them easy to peel off the outer
0:37
skin there now I had brought a large pot
0:40
of water to a boil and if you put a lid
0:43
on it happens faster
0:46
and then what I did was I've just
0:48
removed them it takes one minute in the
0:51
pot and I just put them into cold ice
0:54
water it'll shock them it'll stop the
0:57
cooking process and make the skin easy
1:00
to peel so I'm going to put two more in
1:02
there i'm going to show you what I did
1:04
to help get that skin released now
1:07
remember it just takes one minute in the
1:08
boiling water so you take your peach
1:12
i've already had these done and you want
1:14
to make sure your peaches are clean and
1:16
then you take a pairing knife
1:19
on the bottom of the peach you're going
1:21
to make a line right through the peach
1:23
just a little line i don't know if y'all
1:25
can see that and then you're going to
1:27
come back through and do another line so
1:30
you're going to have a crisscross
1:34
and then what we're going to do I'm
1:36
going to use my spider tool here place
1:39
my peaches on it and place them in now
1:43
these two are ready to come out
1:47
let's shock them
1:50
there we go now the skin is already
1:53
coming off i'm going to get my towel
1:55
here just blot it dry
1:59
you're going to take your peach and you
2:00
want to take your pairing knife and
2:01
you're going to start at the bottom
2:03
where the crissross was and then we're
2:06
going to peel the skin off just like
2:08
that
2:12
now if you have very soft peaches to
2:15
begin with you probably don't need to
2:17
boil them you can see if you can just
2:19
get that skin off but if they're a
2:22
little hard then you can do this step
2:24
right here
2:28
all right there's the peel so I'm gonna
2:31
take my knife
2:32
go all the way down to where the pit is
2:36
and I'm just going to go around
2:39
just like that pop it off
2:43
of the pit and then make your slices
2:49
there we go
2:52
i'm going to carve that pit out
2:56
and slice this one
2:59
oh it smells summery
3:02
it's a nice reason to bring out the ice
3:04
cream huh there we go start on the
3:08
bottom with the crisscross
3:10
and then just peel your skin just going
3:12
to go all the way around the peach
3:19
pull out that
3:21
pit
3:23
and just start slicing
3:33
look at these peaches don't those look
3:35
delicious all right we're going to set
3:37
these up in a baking dish now we're
3:39
going to want to prepare our baking dish
3:42
i'm using an 8 by11 or you can use a 9
3:45
by13 whatever peaches you have is a good
3:48
go-to to determine that size now I'm
3:52
going to prepare it with some butter and
3:54
since I need a stick of butter anyway
3:57
I'm going to take the butter off the
4:00
stick place it right there i'm going to
4:03
take the wrapper and I'm just going to
4:06
coat the inside of the baking dish it
4:09
adds flavor and it'll keep it from
4:11
sticking now while I'm doing this right
4:14
here I'm going to go ahead and stick
4:16
this in the freezer get it nice and cold
4:20
now normally I would just put these
4:21
butter wrappers in the freezer in a
4:24
Ziploc bag but since I needed the stick
4:26
anyway
4:28
just going to go ahead and use this one
4:32
get in the corners
4:36
we go
4:38
y'all you're not going to be able to
4:39
help it grab a peach give it a try
4:45
oh my gosh that's good nice and sweet
4:50
summery let's add it to our baking dish
4:56
can y'all see that look at that yum
5:02
all right we're just going to disperse
5:04
them nice and evenly at the bottom
5:08
is it a crisp or is it a crumble now a
5:12
crisp you have your peaches on the
5:14
bottom and then you sprinkle this
5:15
mixture on top and it gets nice and
5:18
crispy right a crumble you put your
5:21
peaches on the bottom and then you put
5:24
almost like a cake batter on top just
5:26
about right so there's a little
5:28
difference it's going to be more cakey
5:29
for a crumble but more of a crisp for
5:32
the crisp in a large bowl we're going to
5:36
make the mixture to make the crisp
5:38
topping so we're going to add one half2
5:42
cup of allpurpose flour to our large
5:44
mixing bowl
5:47
now you don't have to be precise okay
5:52
just put your measuring tool in your
5:53
flour shake it off till you get a half a
5:55
cup and put it in your large mixing bowl
6:00
and then to that we're going to add half
6:03
a cup
6:05
brown sugar again we're not going to
6:07
pack it or anything like that we're just
6:08
loosely measuring y'all can see up in
6:11
there there we go perfect
6:14
and then we're going to put in one cup
6:17
of oats
6:19
this is what we're using right here
6:22
old-fashioned rolled oats whole grain
6:25
this is what Thomas likes
6:28
he likes to make overnight oats with it
6:33
this is half a cup so we're going to go
6:35
in two times one
6:39
and two
6:41
all right and then we're going to go in
6:43
with one teaspoon of ground cinnamon
6:49
it's cinnamon and peaches go together
6:51
hand in hand don't they
6:54
there we go right in there
6:57
and then I'm going to go wipe off my
7:00
spoon here and we're going to go in with
7:02
half a teaspoon
7:04
of salt
7:14
blend that all together i'm just going
7:16
to use a spoon here that's totally fine
7:20
now we were having a birthday lunch with
7:22
my brother and his wife because their
7:24
birthdays are pretty close together and
7:26
he was talking about making a peach
7:28
crisp and I'm like "Oh I've made one
7:31
before y'all i've never made a peach
7:33
crisp for you i haven't so I'm making
7:37
one right now for you i don't know when
7:38
they're going to make theirs but I'm
7:40
going to make this one here
7:43
that smells good let's bring our butter
7:45
over now i took it out of the freezer
7:48
just kind of firmed it up somewhat
7:50
all right so I'm just going to cut this
7:52
into pieces
7:55
it's easy to manage in the
7:58
mixture there
8:04
now this is not like biscuits okay so we
8:08
don't need to have those little pockets
8:09
we're just going to blend this in to
8:11
give it a nice crisp crumble on top
8:17
all right so I'm going to add that in
8:20
now there's several ways you can do that
8:22
to mix that in you can get a which I'm
8:25
looking for right now there it is you
8:28
can get a pastry blender and go in with
8:32
it you can get two forks you can do two
8:35
knives you can put it in a food
8:37
processor
8:39
you can even go in with your hands if
8:41
you want to do that put on a glove and
8:43
get at it
8:46
yeah that's looking good in there it's
8:48
getting even better
8:51
look at that that looks like what we're
8:54
looking for right here all right let's
8:56
bring our peaches over
9:01
there we go and now we're going to take
9:04
the mixture
9:06
and just kind of sprinkle it all on top
9:11
get nice coverage across your peaches
9:17
it'll just melt on into those peaches
9:20
give them lots of flavor
9:22
nice texture
9:26
um
9:28
I told y'all I was going to bring all
9:29
these summer dishes out my one
9:31
ingredient pasta salad my potato salad
9:36
with a street corn in it and I'm going
9:38
to be bringing y'all some baked beans
9:40
and then Thomas and I are working on an
9:42
ice cream dish for you guys it's coming
9:45
out real soon for Fourth of July so yeah
9:48
we got a lot of things happening
9:51
all right look at that oh now I'm just
9:53
going to take a spoon and just kind of
9:55
press down
9:57
so it all cooks nice and even across the
10:00
top
10:03
all right I've got my oven preheated at
10:05
350°
10:07
we're going to bake this for about 30
10:09
minutes or so till it's nice and golden
10:12
across the topoo
10:14
y'all I'm going to come back serve this
10:16
up with some ice cream
10:20
mhm let us know what you're making for
10:23
the summer
10:25
it's time
10:28
look at that
10:38
let's bowl this up with our ice cream
10:41
here's my bite
10:44
of course we got that ice cream on there
10:54
that topping gives it a nice kind of
10:57
chew to the whole dish with those oats
11:00
in there and that butter adding a little
11:03
saltiness to it and creaminess to it oh
11:06
and those peaches just melt right on in
11:10
don't forget the ice cream got to cool
11:13
it down it's delicious
11:16
all right everyone it's summertime go
11:18
check out my last dishes that I've made
11:21
for summertime
11:23
and have a treat i'll see y'all on the
11:26
next episode bye
