Today we're going to make this delicious
0:02
Doritos casserole. An easy weekn night
0:06
budget friendly meal. Everyone's going
0:09
to love this one. It's creamy. It's
0:12
cheesy. It's got taco flavors in it
0:14
amongst other delicious ingredients to
0:17
pull it all together. It's a casserole.
0:20
So, it's going to be fun one. You guys,
0:23
we have a bag of Doritos that was left
0:26
over from a get together on this past
0:28
weekend. So, I'm like, I'm going to put
0:30
it to some use. Instead of just eating
0:32
the whole bag myself,
0:35
I'm going to make this casserole. You
0:37
heard it. Doritos casserole. It is so
0:41
yummy, you guys. Now, this recipe can be
0:44
found in my cookbook, Catherine's
0:46
Plates, Making Home Cooking Easy. It's
0:48
the white cookbook. Now, if you follow
0:52
along with this recipe as I go along
0:54
today, you should be able to put this
0:55
together with no problem. All right,
0:59
we're going to start in a skillet for
1:01
everything that's going to happen. Then
1:02
we're going to pop it in the oven in a
1:03
casserole dish. Woo! It's going to be a
1:07
good one. All right, you guys. We're
1:09
going to start off in our large deep
1:11
skillet because a lot of stuff's going
1:12
to happen in here. And we're going to
1:14
brown up one pound of ground beef. Now,
1:17
the recipe in my cookbook calls for one
1:19
and a half pounds of ground beef. I'm
1:21
using one pound, or you can even use two
1:23
pounds
1:25
if you want to do that. You can change
1:26
the amount. You can also turn this into
1:29
ground chicken or ground
1:32
turkey if you want to do that. So, while
1:36
we're breaking up the ground beef here
1:38
and letting it start to brown,
1:41
let's dice up an onion. Now, while we're
1:44
dicing up the onion, we're going to go
1:45
ahead and just add it into our pot with
1:48
the ground beef. Let it kind of all come
1:51
together at the same time.
1:54
This is a yellow onion.
2:01
Just going to cut it in half.
2:07
Just going to slice through it.
2:12
Onion adds texture. It bulks up a dish
2:17
and it absorbs the flavors. It's really
2:20
good for you.
2:22
Now, I'm probably going to use this much
2:23
right here. Since I'm not using the full
2:25
one and a half pounds of the ground
2:26
beef, I'll use about 3/4 of the onion
2:29
there. Then, I'm just going to turn it
2:31
and run my knife through it. And that's
2:33
going to be our dices.
2:38
All right. Once we get this all diced
2:39
up, let's add it to the ground beef.
3:00
All right, that's all the chopping we're
3:01
doing. You know the drill. As soon as I
3:04
get this all browned up, broken up, and
3:07
the onions nice and soft, I'll bring you
3:09
back.
3:11
All right, the ground beef is all
3:12
browned up, broken up, and the onions
3:14
are nice and soft. What we're going to
3:16
do is remove any excess grease that may
3:18
be in our pan. I'm just going to use my
3:21
paper towel trick. Just put it into the
3:24
pan. Take my wooden spoon and just press
3:26
it around. Dab any of that excess.
3:40
Now, we're going to add in one teaspoon
3:42
of minced garlic.
3:50
We'll mix this in for one minute to help
3:53
release the aromomas of that delicious
3:55
garlic into the ground beef and the
3:57
onion. Wake it up in there.
4:01
All right, here's where all the fun
4:02
comes in. Now, we were having fun
4:04
already, right?
4:07
We're going to have some more. What
4:09
we're going to do now is add in some
4:10
canned ingredients. I have one can of
4:13
whole kernel corn. Now, this is no salt
4:16
added. Whatever you have in your pantry,
4:18
just make sure you drain it. We're going
4:19
to add that in.
4:26
We're going to add in one can of diced
4:29
tomatoes,
4:32
juice, and all. And then I'm going to
4:34
add in 4 oz of green chilies. Come in a
4:39
can.
4:41
Now, if you want, I would put in two
4:43
cans of Rotel tomatoes separate from
4:47
this.
4:49
If you want to do that, you'll get the
4:51
same technique here, though. You'll get
4:54
the same flavors.
5:01
Doing a dance with my dog down there. If
5:03
you all saw our Q&A show, you saw Bailey
5:06
on it. So, she's down here. We're doing
5:09
the tango. All right, the next thing
5:11
we're going to add is our taco
5:13
seasoning. Now, I have my homemade blend
5:16
here. Doesn't that look good,
5:19
y'all? Don't do the little baggies that
5:21
you can get from the store. But if
5:23
you're doing that, that's totally fine.
5:24
One packet will go in. One packet equals
5:28
3 tablespoons of homemade taco
5:31
seasoning. Or, you know, if you get it
5:33
from the jar at your store, then three
5:35
tablespoons. We'll add those in.
5:42
I'm estimating
5:47
cuz we're going to need the rest of the
5:48
bag as we're layering our casserole.
5:54
Just crush them in.
6:03
I'll probably do another handful here.
6:13
There we go. Wash your hands.
6:18
All right, we're going to mix this all
6:19
together. We're going to let this simmer
6:22
for about 3 to 5 minutes. Get all those
6:24
flavors pulled in together.
6:29
All right, you guys, turn off your
6:30
burner. Take it off. We're going to add
6:32
in some creaminess and some cheesiness
6:35
to kind of pull it together before we
6:37
start layering for the casserole. I've
6:39
got one cup sour cream
6:42
going in. Give it a little tanginess.
6:50
And then we're going to add in one cup
6:56
shredded cheese. Now I'm using a
6:58
Monterey Jack cheese. You can also use
7:03
cheddar cheese if you want to do that.
7:04
Or if you got a cheese blend that's
7:07
Mexican, you can do that. But I'm going
7:09
to do this right here.
7:12
This is half of the cheese right here.
7:13
We still got another round of cheese
7:16
going to happen.
7:19
All right, let's add this in and then
7:21
we'll start all together.
7:26
Too bad, Joseph. He's going to get this
7:29
casserole, though. He'll come for it.
7:31
All right, let's mix this all together
7:33
till well combined.
7:36
Smells good in there, you guys.
7:46
All right, let's get our casserole dish.
7:52
We're using a 9 by13. I'm going to spray
7:54
it with some cooking spray.
7:58
We're going to take one and 1/2 cups of
8:00
Doritos and just place them right across
8:02
the bottom.
8:10
Those smell good.
8:12
Nacho flavor.
8:14
Now, like I said, if you don't want to
8:16
use those, you can use Fritos or you can
8:18
use tortilla chips that are baked or
8:21
fried, whatever they got. Corn tortillas
8:24
or the white ones. You can use those.
8:26
All right. Now, to that it says, "Spread
8:29
half of the meat mixture over the
8:30
Doritos carefully."
8:34
>> There you go.
8:37
Now, if you want to add beans to it, you
8:39
can do that.
8:43
>> Remember, we're going to use half the
8:44
meat mixture here. Just kind of spread
8:47
it out
8:48
so that every bite has a Dorito meat
8:52
mixture. Yeah, there we go.
8:58
We're going to take half a cup of
8:59
shredded cheese.
9:01
Place that on top.
9:07
And we're going to start all over again.
9:10
Doritos. One and 1/2 cups.
9:14
We save some. Can y'all tell Thomas is
9:17
here?
9:17
>> No.
9:18
>> Tell him to get out of that bag.
9:20
>> Nope.
9:21
>> No. All right. So, we're going to bring
9:23
over the rest of the meat mixture and
9:25
place that on top.
9:27
Now, this was one pound of ground beef,
9:29
so keep that in mind. So, if you double
9:30
up on that, it's going to be more
9:33
mixture here. Put it where you need it.
9:38
Grab some cheese. Let's top it.
9:44
Mhm.
9:46
Grab a sheet of foil. We're going to
9:49
cover the baking dish.
9:54
I'VE GOT my oven preheated at 350°.
9:58
We're going to bake this for 30 minutes.
10:01
We're going to remove the foil. And then
10:04
we're going to bake it another 5 or 10
10:06
minutes until that cheese is nice and
10:07
melted and kind of goldy brown. And then
10:10
we're going to give it a garnish. And we
10:12
got to give it a try for you. I'll be
10:14
back. There it is, you guys. I just
10:17
crushed up some extra Doritos on the
10:19
top. Got some green onions on top for a
10:21
pop of color.
10:32
Easy weekn night budget friendly meal
10:35
that your whole family is going to love.
10:39
I'm going to take a bite for you. Look
10:41
at that.
10:44
All right, you guys. There's my bite.
10:59
There's a lot of flavors going on in
11:01
there. Lots of layers. It's really
11:04
delicious.
11:08
I love those Doritos in there.
11:12
Mhm.
11:17
the big diced tomatoes, the corn, the
11:21
taco seasoning kind of pulling it all
11:22
together with those flavors. All right,
11:24
you guys, let me know what you think of
11:26
my Doritos casserole. Ground beef
11:29
recipe. Taco seasoning gives it that
11:32
Mexican flare just a little bit. The
11:34
recipe was in my Katherine's Plates
11:38
Making Home Cooking Easy, the white
11:40
cookbook.
11:42
or if you followed along, I don't know
11:44
how you would not be able to put this
11:45
one together. All right, you guys. You
11:48
can find that recipe on
11:49
kathern'splates.com, which is my recipe
