Hi everyone. Welcome back to Katherine's
0:02
Plates. Today I'm going to show you how
0:04
to make blueberry butter swim biscuits.
0:08
They're delicious. They're quick.
0:11
They're buttery. They're sweet. That's
0:14
going to happen with these blueberries.
0:16
A little bit of sugar and a glaze on
0:18
top. And they're going to be the
0:20
fluffiest biscuit you've ever had. Y'all
0:24
ready?
0:26
Grab an 8 by8 baking dish
0:31
and a stick of butter. Now, you don't
0:33
have to melt the butter and you do not
0:36
have to have it softened and sitting on
0:38
your countertop. Put it right into your
0:40
baking dish.
0:42
The whole stick. That's half a cup.
0:53
Now, don't think about wasting this
0:54
butter, you guys.
0:58
Just get a Ziploc bag.
1:01
Put this in there. Put this in your
1:03
freezer. And then when you need to
1:06
grease a baking dish or even a skillet,
1:09
you can just pop this out and rub it all
1:11
over it. Ah, yeah. Did you like that tip
1:14
for the day? It's a good one. What we're
1:18
going to do now is preheat our oven to
1:21
450°.
1:23
Now, when you put that on to 450°, go
1:26
ahead and pop your pan with the butter
1:29
in it into the oven. When it hits 450°,
1:33
pull it out cuz that butter has melted.
1:39
So, I'm going to place it in.
1:41
Here we go.
1:45
And we'll hit
1:48
450°.
1:50
Let's go.
1:54
All right. Now, you want to get your
1:57
blueberries. You're going to need about
1:58
one cup. You want to wash them off
2:00
really well. Just rinse them under some
2:02
water really good. And then I put them
2:05
in a bowl that has some paper towels in
2:07
them. Put your blueberries on top. And
2:10
then just take your paper towels and
2:11
just kind of run them over the
2:12
blueberries. Just kind of dry them off a
2:14
little bit so we're not getting too much
2:15
moisture into our batter.
2:21
Try want to make sure it's good.
2:25
[Music]
2:26
Yeah,
2:29
that's good. If y'all saw my grocery
2:32
haul, I picked these up at HB, our local
2:35
store,
2:37
the Texas area. All right, we're going
2:39
to set these off to the side and let's
2:41
make that batter.
2:43
We're going to start in a large mixing
2:45
bowl and we're going to measure out two
2:47
cups
2:48
of allpurpose flour.
2:55
Now, there's many ways to measure out
2:57
your flour. Take your scoop, which I
2:59
have a half a cup here. Then just go in
3:02
and measure that out.
3:09
And then we're just going to
3:12
and put her in our bowl. Now, I'm going
3:14
to do that three more times to get my
3:15
two cups.
3:17
We're going to have some fluffy
3:18
biscuits.
3:22
Just go across the top of your measuring
3:24
spoon here.
3:28
You don't want to smush the flour in or
3:30
you'll tend to get too much flour.
3:37
All right, we're going to add in one
3:39
tablespoon of baking powder.
3:44
That'll help give it a rise.
3:50
There we go.
3:53
And then we're going to do one teaspoon
3:55
of salt.
4:02
and
4:04
one tablespoon of sugar.
4:10
There we go. Grab a whisk.
4:15
We're going to blend this all together.
4:17
We want to airate that flour and get
4:19
everything incorporated very well.
4:22
That'll help make those fluffy biscuits.
4:27
Just takes a minute.
4:30
Or you can run this through a sifter if
4:33
you want to do that or a flour blender.
4:38
There we go.
4:40
All right. We're going to measure out 1
4:42
and 1/2 cups of buttermilk.
4:45
Now, there are several ways to make
4:48
buttermilk. If you don't have buttermilk
4:51
or if you don't think you're going to
4:52
need all of it, then you can make your
4:55
own. Now, since I'm using 1 and 1/2 cups
4:57
of buttermilk, what you want to do is
4:59
get 1 and 1/2 teaspoon of some lemon
5:01
juice. Put that into your measuring cup
5:04
and then pour regular milk into the
5:07
measuring cup up to the 1 and 1/2 cup
5:10
line. Stir it with a fork. Let it sit
5:13
for about five minutes and you've got a
5:16
replica of buttermilk. You can also
5:19
change out that lemon juice for vinegar
5:22
and do it the same way. All right, let's
5:24
measure it out.
5:30
There we go.
5:33
Right there. I have leftover more for
5:37
more biscuits.
5:42
All right, let's check our butter cuz
5:44
the timer for the oven just went off
5:46
that our preheat is done for the 450°.
5:52
All right, we're going to pull that out.
5:55
We're just going to let it sit until we
5:56
finish the batter.
5:58
All right, pour your buttermilk into
6:00
your flour mixture and just whisk it on
6:03
in.
6:04
We're looking for a dough.
6:09
Kind of a doughy consistency.
6:18
Now, it's going to be a wet mixture. All
6:22
right, that's what we're looking for
6:24
right there.
6:29
We're going to take those blueberries.
6:31
Now, we're going to add them in. Now,
6:32
you can add in about a cup, cup and a
6:34
half.
6:36
That looks good. I'm going to save some
6:38
for the top.
6:42
Just take your spatula and we're going
6:44
to fold these in.
6:48
Oh, that dough looks so fluffy.
6:51
All right, we're going to lay down a
6:53
towel on our work surface and we're
6:55
going to bring over our butter.
7:00
There we go. Get that nice and even in
7:02
there. Now, what you want to do is take
7:04
your batter and we're going to dollop it
7:06
around.
7:10
Lay it right on top of that melted
7:12
butter.
7:18
Just keep going until you get it all in
7:19
there.
7:22
Now, check your butter while it's in the
7:25
oven because you don't want to burn it.
7:26
And depending on what dish you're using,
7:29
it can melt pretty quickly. So, and how
7:32
fast your oven preheats. So, make sure
7:34
you keep an eye on it. All right. I'm
7:36
going to scrape off the excess dough
7:38
here so we can get it all on there.
7:41
Now I'm just going to take my knife and
7:43
I'm just going to smooth it out just a
7:45
little bit. Don't go too much. Okay.
7:48
And then I'm going to we're just going
7:50
to kind of drive our knife through the
7:52
batter. Make lines.
7:56
Kind of a fake cut there.
8:04
Now I'm going to take some more
8:05
blueberries. Sprinkle them on top.
8:10
Y'all want any more in there?
8:14
Okay. Give it a nice presentation. Our
8:17
oven is still heated at the 450°.
8:20
We're going to bake our blueberry butter
8:23
swim biscuits for 25 to 30 minutes till
8:27
they're nice and golden brown across the
8:29
top. And we're going to make a
8:30
delicious, easy twoingredient glaze to
8:33
put on top. Look at these.
8:37
I already did a toothpick test. I just
8:39
put it through the center and it came
8:40
out nice and clean. They're golden
8:42
brown. Those blueberries have popped on
8:45
the top. Oh my goodness. Let's make a
8:47
drizzle for this. I got to try these out
8:50
for you.
8:52
All right, we're going to make that
8:53
glaze.
8:55
In a small bowl, I'm going to put in
8:57
half a cup of some powdered sugar.
9:03
Now, I'm going to add about a little
9:05
slurry of milk. about maybe a
9:08
tablespoon. And we're going to blend
9:09
that up together.
9:14
Now, as you're mixing this, if it's too
9:16
thin, you can add more powdered sugar.
9:18
And if it's too thick, you can add more
9:21
milk. Got to love that recipe, huh? It's
9:25
a little thick for me. So, I'm going to
9:26
add a little bit more.
9:30
Oh, yeah. That's perfect right there.
9:33
Let's cut some biscuits. All right.
9:34
Let's follow the lines that we had made
9:36
earlier.
9:43
All right, I'm going to go ahead and
9:45
drizzle. It's going to melt on there. We
9:49
don't care.
9:56
Put as much on there as you want.
10:01
All right, I'm going to pull one out of
10:02
here for you. We're going to pull them
10:04
all out of here.
10:06
It's like a cookie. Get them off the
10:08
pan.
10:15
What do y'all think?
10:21
I think that's going to go good with
10:22
some coffee. That's what I think.
10:26
We're getting some cold enough weather
10:27
for it.
10:29
All right, I'm gonna give that a try for
10:30
you.
10:34
All right, you guys. Look at that.
10:39
Thomas already found his one. Which one
10:41
is it, dear?
10:42
It's that one.
10:44
That one right there.
10:45
And that one.
10:47
I guess that one right there is mine.
10:48
Possibly that one.
10:51
Look at you guys.
10:55
I'm going to give that a try. It's like
10:56
a dessert.
10:58
We don't wait for anything in this
11:00
house. Straight out of the oven and we
11:02
eat it.
11:14
That is buttery.
11:16
I love the blueberries in it. It's nice
11:19
and fluffy. Oh, look at that golden. Oh,
11:22
those blueberries are just popping
11:24
everywhere.
11:26
I love the crispy edges along the
11:29
outside of this.
11:33
Mhm.
11:35
Y'all need to make some. Don't forget
11:37
that glaze.
11:39
That just makes it. All right, you guys.
11:43
Who's making butter swim blueberry
11:46
