Hello everyone and welcome back to
0:02
Katherine's Plates where it's always
0:04
simple, easy, and delicious. Today is
0:06
Crockpot day. It is the holiday season,
0:10
but we still have to eat normal meals.
0:12
Can't eat turkey every day. I am going
0:15
to be making a classic dish and we are
0:18
going to swamp it up.
0:23
Yes. So, the classic dish is potatoes,
0:26
green beans, and sausage in the crock
0:29
pot. And we are going to turn this into
0:33
swamp potatoes. It's a viral video going
0:36
on out there. And let me tell you, it
0:39
looks delicious. And I think what's
0:42
great about it is you can take out the
0:45
green beans and add cabbage to it, which
0:48
I'm going to do one day, that's for
0:50
sure. All right, you guys. Let's make
0:52
swamp potatoes in the crock pot. Come on
0:56
up. First thing we're going to do is
0:59
take our potatoes. You want about two to
1:02
three lbs. And these are ranch hand
1:05
yellows. You can use whatever kind of
1:07
yellow potatoes that you can find. And
1:10
that's what these look like right here.
1:13
And this is a three lb bag. This will be
1:15
perfect. So, what we're going to do is
1:17
clean these up really good. And then
1:19
we're going to chop these into
1:20
bite-sized pieces.
1:25
All right, we have them all scrubbed up.
1:29
So, we're just going to take them.
1:32
We're going to cut them in half.
1:36
Cut it in half. And then we're going to
1:38
just make bite-sized pieces like this
1:41
right here. You want them to hold their
1:42
shape in the crock pot.
1:46
And then we want them to cook all nice
1:48
and even. So we want them all the same
1:50
size.
1:52
Now I am leaving the skins on.
1:56
Give a lot of nutrients
2:00
and they just look nice, right?
2:03
What's great about this is that you can
2:04
go into your pantry and pull out any
2:06
potatoes that you have to do this recipe
2:08
with.
2:11
Long as you have about two to three
2:12
pounds.
2:15
This is probably the fastest crockot
2:17
meal you could put together and let sit
2:21
for hours
2:25
cuz we're not having to precook any meat
2:29
or sauté anything before we put it in
2:30
the crock pot. This is kind of one of
2:32
those dumpand go recipes.
2:35
Got to love those.
2:38
It's fall time and it's perfect for if
2:42
you have a busy day scheduled. Just put
2:45
this all in the crock pot, let it go,
2:47
and go do what you need to do. What?
2:49
Some Christmas shopping
2:51
or shopping for Thanksgiving.
2:55
All right, I've decided to do about two
2:57
2 and 12 lbs of potatoes. So, I'm saving
2:59
this for another recipe, which was about
3:01
a pound of them. So, we're going to go
3:03
ahead and add these to our crock pot,
3:05
which we're going to go ahead and spray
3:06
with some non-stick cooking spray so
3:08
that our potatoes don't stick in the
3:10
crock pot.
3:16
There we go.
3:19
All right, let's get them in there.
3:30
What you're going to need next is one
3:32
pound of fresh green beans. Now, these
3:36
are already washed and ready to eat. So,
3:41
I just put them in a bowl and I'm going
3:42
through and making sure there's no stems
3:44
or anything like that. And if you want
3:45
to get rid of some of the vine stems
3:48
here, then you can cut those off. We're
3:51
going to add those to the crock pot.
3:58
look through and make sure you get
3:59
anything out of there that you don't
4:02
want. So, this is what I'm going to be
4:04
putting in right here. Now, remember
4:06
that you can switch out the green beans
4:08
for cabbage. Chop it up pretty large
4:11
when you put it in because it'll be
4:13
sitting in here for a while and you
4:14
don't want it to shrink it down to
4:15
nothing.
4:18
Well, this is where you can have some
4:19
fun and change up the flavors you want.
4:23
You want to get a linked sausage. Now,
4:26
you can use kilbasa, you can use smoked
4:28
sausage or smoked chicken. I'm using the
4:32
turkey smoked sausage. We're just going
4:34
to open this up. You want about 13 oz,
4:37
which is usually what the length size
4:40
comes in.
4:44
And so, what we're going to do is just
4:46
slice it.
4:51
They say coin shapes like this right
4:54
here.
4:58
I'm using the turkey. It's healthier,
5:00
but you can use any flavor you want. And
5:07
it's limitless, right? Whatever you can
5:09
find and like. It's going to be a
5:11
crockot full. But it's going to cook
5:14
down.
5:20
All right, let's add that to our crock
5:22
pot.
5:31
All right, let's hurry up and chop up
5:32
this big yellow onion.
5:36
Just take off those sides. Peel off that
5:39
outer layer.
5:48
There we go. Get rid of all of that.
5:51
Cut it in half.
5:57
Cut that in half.
6:00
Depends on how big the onion is, how
6:02
many slices you make. And then we'll
6:05
just run a knife through. Make big
6:08
chops.
6:14
And then we'll just add that to the
6:16
crock pot.
6:20
cuz these will melt down all in there.
6:24
Nobody will even know they're in there
6:27
because they're going to taste so good
6:29
with that swamp sauce that's going to
6:32
happen.
6:33
I got two big cloves of garlic. I'm just
6:37
going to pound on them.
6:40
Flatten them out.
6:46
Take that outer layer of skin off of the
6:48
garlic.
6:51
All right, I'm just going to run my
6:53
knife through
6:59
till I get a nice mince on them. You can
7:02
use jarred garlic if you want to do
7:03
that.
7:10
Oh, that looks good. All right, we're
7:13
going to take all of that.
7:15
We're going to add that to the crock
7:16
pot. All right, you guys. Forgot to turn
7:19
y'all back on.
7:21
There's all the little garlic pieces
7:23
inside the crock pot here. Look at that.
7:26
It smells delicious.
7:29
All right, we're done chopping
7:31
everything we need for the crock pot.
7:33
Let's give it some flavor. We got to
7:35
make them swampy.
7:37
First thing we're going to do is take
7:40
one packet of Lip and Onion soup mix.
7:45
Yeah, flavor town right now happening.
7:51
Just one packet.
7:54
You don't want to overwhelm your flavors
7:56
here.
8:09
There we go.
8:11
That's what we're using right here.
8:15
Right. We're going to use some Kinder
8:17
Buttery Steakhouse. Whatever flavors you
8:20
have seasoning wise, you can add. Give
8:25
it some flavor.
8:28
We go.
8:30
cracked black pepper.
8:38
Get that pepper in there.
8:43
Okay. Don't overdo it. Take a stick of
8:45
butter and we're going to place pats all
8:49
over the swampy potatoes here.
8:58
the whole stick. Half a cup of butter.
9:06
All right, let's place it on.
9:10
It's going to help make that swamp
9:13
gravy for this.
9:19
There we go.
9:22
Got to give it some liquid.
9:25
Beef broth
9:27
or if you want chicken broth in there.
9:32
This will be a really good flavor. About
9:35
half cup to one cup.
9:44
That'll get that going. Now what we're
9:46
going to do,
9:48
place a lid on.
9:52
Now about halfway through the cooking
9:54
time, we are going to stir everything
9:56
around and get that lip and onion soup
9:59
mix and the beef broth and the butter
10:00
and the seasonings kind of all jelling
10:03
together with everything. We're going to
10:05
cook this on high for about four to five
10:08
hours. Make sure those potatoes are nice
10:10
and tender. Or you can cook on low for 5
10:13
to 6 hours. You guys, I can't wait to
10:16
come back. Give these a try. Swamp
10:18
potatoes style. Here we go, you guys.
10:22
Those are my swamp potatoes. We got the
10:25
green beans, the sausage in there, and
10:27
all those delicious flavors. Now, this
10:29
cooked on high for 5 hours. Look,
10:34
those beans are nice and tender. The
10:37
potatoes are soft.
10:41
Yeah. Let's get that sausage in there.
10:46
Y'all ready for a bite? Woo! Let's grab
10:49
a bite. We got the potato.
10:53
We got the sausage
10:55
and the green bean.
10:58
Y'all, look at that juice in there. M. I
11:02
bet that's so full of flavor. We're
11:03
going to try that also.
11:05
But here's my bite.
11:18
That is delicious. Oh, it's so full of
11:21
flavor. It's very comforting, too.
11:26
What a way to change a classic crockot
11:29
recipe.
11:32
[Music]
11:35
That's good. And it can't be because of
11:37
the one stick of butter that went in,
11:39
right?
11:40
Do y'all remember?
11:43
Thumbs up on this one. Have you ever
11:44
heard of swamp potatoes?
11:47
Bring this out. This would be great
11:50
before Thanksgiving because you know you
11:52
don't want to be cooking turkey all
11:54
week, right? All right, you guys. I'll
11:57
see y'all on the next episode. Bye.
12:02
This is cool.
