Welcome back everyone to Katherine's
0:02
Plates where it's always simple, easy,
0:04
and delicious in my kitchen. Easter is
0:06
right around the corner and so is
0:08
springtime. I want to show you how to
0:10
make a delicious Easter spring salad.
0:15
Okay, this salad will sit beautifully
0:19
next to your ham on your Easter table or
0:22
you can serve it up at springtime with
0:24
your barbecues, potlucks, or anything
0:27
like that. It's cool. It's refreshing.
0:29
It's colorful.
0:32
And it's a little fruity. All right, you
0:34
guys. I'm Katherine. Let's go ahead and
0:36
get started.
0:40
Look at these marshmallows. Don't they
0:43
look delicious? These are called
0:46
Campfire. They're fun fruit flavors.
0:49
They're mini marshmallows. And the
0:51
flavors are orange, lemon, strawberry,
0:56
and lime.
0:58
That'll add a delicious flavor to our
1:01
fruit salad.
1:04
We're going to start with this first.
1:06
We've got to make our pudding. I'm using
1:09
a 3.4 oz size box of vanilla Jell-O
1:14
pudding. This is the instant variety,
1:17
not the cook and serve. So, let's go
1:19
ahead and grab a bowl. We'll put this
1:21
one together.
1:24
Cool. Whip.
1:26
Eight ounces. Make sure you thaw it out
1:28
in your refrigerator cuz this does come
1:30
in the freezer section of your store.
1:32
It's only 8 oz, you guys. This is a
1:35
great make ahead dish, let me tell you.
1:39
Make it the night before. Put it
1:40
together. Let it sit in your
1:41
refrigerator. Let it melt all together.
1:44
Be nice and cool and refreshing. All
1:47
right. My dog's down there helping.
1:49
Bailey, if y'all don't know her. All
1:51
right. We're going to take the Cool
1:52
Whip. We're going to place it into a
1:54
large mixing bowl.
2:05
Make sure it's thought out.
2:11
Take your box of Jell-O pudding instant,
2:15
the 3.4 oz size.
2:20
Add it to the Cool Whip.
2:24
Then we're going to whisk vigorously.
2:34
I say whisk. Take your spatula and just
2:37
kind of fold that in.
2:47
It's going to ensure that our fruit
2:50
salad holds its shape.
2:54
That pudding will thicken things up.
3:01
All right,
3:03
that out of the way. I'm going to bring
3:05
over a small bowl two cans of crushed
3:09
pineapple
3:11
and a strainer here. We're going to add
3:13
the crushed pineapple to it. We're going
3:15
to drain it out really well.
3:19
That's what we're looking at right
3:20
there.
3:22
Now, these are 8 oz each.
3:29
Got one.
3:32
And then save the juice for yourself.
3:34
You can have a nice little cocktail.
3:38
There we go. Just grab a fork, smush it
3:42
down. Get as much juice out that you
3:45
can.
3:49
You don't have to like dry it out, okay?
3:51
But just get as much juice out as you
3:53
can.
3:55
All right, swing that out of the way.
3:58
Bring this back over. Add the pineapple
4:01
to the Cool Whip and the pudding
4:03
mixture.
4:04
Fold it in.
4:11
Oh, it's already smelling delicious.
4:18
This be a great fruit salad for like a
4:20
barbecue.
4:22
Cool and refreshing on those warm days.
4:30
All right, grab your mini marshmallows.
4:32
One package. This is 10 oz. So, we're
4:37
going to add them all in and get those
4:39
folded in. Love the colors in here. As
4:43
many as you want. I'm going to fold it
4:45
about that right there. Eight ounces.
4:47
Leave those.
4:50
Let's see if these taste like what they
4:52
say they're going to taste like.
4:55
What do you think? I got Thomas in here.
4:58
>> Hey.
4:59
>> Did you What flavor did you pick up?
5:01
>> I don't know.
5:03
>> Orange, lemon, strawberry, or lime?
5:07
>> Marshmallow.
5:14
marshmallow. Yep, that's what I'm
5:16
getting to. All right, let's fold these
5:19
in.
5:23
Get a good mix on them.
5:26
Now, just be careful as you're mixing
5:28
things. You don't want to over mix and
5:30
deflate the Cool Whip and the pudding.
5:35
Y'all, doesn't that look good?
5:40
Let's talk about the other things. Now,
5:42
if you want to add shredded coconut, you
5:45
can do that. Or you can even add some
5:48
shredded carrot to it to kind of give it
5:50
that Easter flare.
5:53
Can add nuts, which I've got some
5:55
walnuts right here. And these are kind
5:57
of the whole and the halves of them. So,
5:59
I'm just going to break them up a little
6:00
bit. And I'm definitely going to put
6:01
some nuts in the salad.
6:09
I'm not going to crush them too much. I
6:11
want them to keep their shape a little
6:12
bit. So, we'll add some in.
6:17
Let's mix those in.
6:23
All right, I'm going to move this over
6:24
to a serving bowl.
6:33
Now, what I'm going to do is you can top
6:36
it with the different toppings
6:39
that you've already used.
6:43
I'm just going to put a little
6:45
sprinkling of marshmallows on here.
6:50
People can see what it is. A few nuts.
6:56
All right, you guys. What do you think
6:57
of my Easter spring fruit salad?
7:04
All right, you guys. 15 minutes, no
7:07
cook, no bake. Look how that all comes
7:10
together.
7:12
It sets up really well. You can make
7:13
that like right before you need to or
7:16
put it in your refrigerator. Let it sit
7:18
overnight and let all those flavors kind
7:21
of meld together, get nice and crisp.
7:25
Let's go for a bite.
7:38
Wow. I love those little bits of
7:40
pineapple in there. I'm a big fan of
7:43
pineapple anyway. And then you got the
7:45
chewiness from the marshmallows, that
7:47
pudding in there, and all just cool and
7:50
refreshing. And the crunch from the
7:52
nuts. All right, you guys. Happy Easter.
