Welcome back everyone to Katherine's
0:02
Plates. It's time for some banana
0:04
pudding creaminess with a little crunch
0:08
from some cookies, some texture from the
0:10
bananas, some flavor. It's going to pull
0:13
it all together. This is an easy recipe,
0:17
and it comes out of my first cookbook,
0:20
making home cooking simple, easy, and
0:23
delicious. This cookbook came out eight
0:27
years ago. Now, you are able to follow
0:31
through with this recipe today and write
0:34
down your own recipe if y'all want to.
0:36
Or you can find the actual recipe on my
0:39
recipe blog, catherine'splates.com.
0:43
Now, woo. Usually, you need some very,
0:45
very fresh bananas for this recipe. But
0:47
you can see I'm going to be using these
0:49
right here.
0:51
They're ready to go. [laughter]
0:53
So, that's how he's going to get them,
0:54
which is fine because it's they're
0:56
sweeter that way, right? Okay, we're
0:59
going to go ahead and get started. I've
1:00
got a large mixing bowl. To that, we're
1:04
going to add one package of cream
1:07
cheese, 8 oz. You want to leave this
1:11
out. You can leave it out for about 1
1:13
hour. I wouldn't leave it out any longer
1:15
than that because it is a milk product.
1:19
And if you need, if you just pulled it
1:21
out of the refrigerator, you can take it
1:22
out of its little packaging here, put it
1:24
on a microwave safe plate and then
1:28
microwave it for about 10 seconds, 10
1:30
seconds until you get to a nice kind of
1:32
smooth consistency. You don't want it
1:35
runny. All right? Because it's got to
1:37
hold everything together and we're not
1:39
cooking anything.
1:43
All right? So, let's add that to our
1:46
large mixing bowl.
1:48
We got the sunshine out today. We needed
1:51
it, that's for sure.
1:54
All right, so I'm going to just kind of
1:56
press down on my cream cheese. And I
2:00
feel like I'm going to microwave that
2:02
for about 10 or maybe 20 seconds and
2:04
make sure it's nice and soft.
2:10
All right, let's look at it. Yep. 10
2:13
more seconds.
2:15
All right. Oh, yeah. That's if if you
2:18
could get your spatula through it like
2:19
that, that is creamy enough. Just make
2:21
sure you only do it in 10 second
2:23
increments because you don't want it
2:25
melted in there. Just nice and creamy
2:28
like that.
2:29
[snorts] Y'all looking forward to six
2:32
more weeks of winter.
2:35
Is it coming? [sighs and gasps]
2:37
Oh my goodness. We're in Southeast Texas
2:41
and that's a little much for us.
2:47
A little much. All right. Now, I'm going
2:49
to take my electric hand mixer and I'm
2:52
going to beat this until it's nice and
2:54
creamy.
3:00
Cream cheese smells so good, doesn't it?
3:03
Yeah.
3:05
The next thing we're going to do is add
3:07
in one can of sweetened condensed milk.
3:11
Now, this is 14 oz.
3:17
It's going to add such a yumminess to
3:20
this dish.
3:22
All right,
3:25
get you a can scraper. Get all that
3:28
excess out.
3:30
[sighs]
3:37
And then once we get all of that out,
3:43
there's nothing wrong with tasting it.
3:50
Wow. That's like a dessert on its own.
3:53
[laughter]
3:55
[snorts]
3:58
All right, let's talk about the next
3:59
ingredient. Y'all be real in your
4:01
kitchen. [laughter]
4:03
I am using a familysiz box of vanilla
4:08
instant pudding and pie filling. It's
4:11
the powder.
4:13
You want to get the instant, not the one
4:15
that you have to cook on your stove top.
4:17
Okay? You don't want that one.
4:21
Um, let me tell you how many ounces. 5.1
4:24
oz size.
4:26
If you're [snorts] following along with
4:28
the directions, there you go.
4:34
Oh my gosh, y'all. I just Where did that
4:36
happen? Oh.
4:39
All right.
4:42
Can y'all see what happened? [laughter]
4:46
Oh my gosh. Okay. Hopefully there's
4:49
enough left in here to help set this up.
4:53
Where did it Oh, I see it down there at
4:56
the bottom. All right. Be careful when
4:58
you do that.
5:02
My god.
5:05
There we go. Let's see if we got enough
5:06
in there because I got it all over the
5:08
floor.
5:10
Powder all over the place over here. All
5:13
right. That's okay. You get a free
5:16
blooper today.
5:18
[laughter]
5:20
[snorts]
5:22
Was I being funny? Too funny or
5:24
something? Yep. Okay. All right.
5:27
All right. We're gonna cream this all
5:29
together
5:31
and I'm going to clean up a mess on the
5:32
floor.
5:36
[laughter]
5:37
Y'all let us know what y'all do in your
5:39
kitchen. What happens in your kitchen? I
5:41
know what happens. Let us know. Let's
5:44
talk about it. Yeah.
5:48
The worst thing that I've done is I have
5:52
caught my oven on fire.
5:55
Had to get a brand new oven.
5:58
And then I was pulling a casserole dish
6:00
out of there and I went to lay it down
6:02
on the counter and it hit the side of it
6:04
and went everywhere. Broke my beautiful
6:07
casserole dish, too.
6:10
Yeah. So, hey, let us know cuz we're all
6:13
human. All right, y'all. Can y'all see
6:15
that in there?
6:17
Yeah. All right, let's see what's next.
6:21
It's been a while. Ask Thomas. He knows.
6:24
All right, let me go get three cups of
6:27
cold milk.
6:31
All right, back to the regularly
6:33
scheduled program. We're going to
6:35
slowly, while we're mixing
6:38
the three cups of milk into our pudding,
6:41
cream cheese, and sweetened condensed
6:42
milk mixture in there
6:50
very slowly.
6:53
That way it doesn't splash on you.
6:56
Oh, smells good.
7:02
Want to make sure this is nice and
7:03
smooth.
7:06
Since I lost a lot of the pudding on my
7:08
floor, I'm not going to finish putting
7:11
all that milk in. I'm worried I'm not
7:13
going to it's going to thicken up too
7:15
much. So, we're just going to go with
7:16
this right here.
7:18
And no, Thomas did not see all this
7:20
happen. He was gone running errands.
7:25
[gasps]
7:25
You'll see it on camera. Don't worry.
7:28
[laughter]
7:31
All right. Now, what we're going to do
7:32
is add in one teaspoon
7:36
of vanilla extract. Clean up this right
7:39
here. There we go. And we'll just beat
7:42
that in just until combined.
7:50
Y'all, it smells good in there.
7:53
That is it.
7:58
Always quality check.
8:01
You don't want to serve your husband bad
8:04
banana pudding, do you?
8:09
Wow,
8:12
that's delicious. All right, let's take
8:14
the beers off. We're done
8:18
all of that.
8:21
All right. Next.
8:25
Do you always feel like you're having
8:26
one of those days?
8:28
[laughter]
8:29
I am right now. It's just banana
8:31
[snorts] pudding, too. All right. Now,
8:34
what we want to do is fold in half of
8:37
our whipped topping. Let me go get that,
8:41
which is this right here. This is 8 oz.
8:44
And we're going to be putting in 4 oz
8:46
into there. And we will save the other 4
8:48
ounces for the end of the recipe. All
8:51
right. Now, I did thaw this out.
8:56
Remember, save that for the rest of the
8:58
recipe. Just hang on to it. We're going
9:01
to grab our spatula and we're going to
9:03
fold it in. Folding in just means pull
9:06
from the bottom and fold through the
9:09
whipped topping. All right, we're going
9:11
to do this until all those white streaks
9:13
are gone. All
9:16
right, let's set this aside. We're going
9:18
to bring over a mediumsiz
9:21
serving bowl and vanilla wafers.
9:25
There we go. We're going to be a little
9:27
creative with this. As you can see, this
9:28
was a beautiful shot of my banana
9:31
pudding. So, we're going to do that.
9:34
It's kind of a checkerboard look between
9:36
the cookies and the bananas.
9:40
And we're going to do a layer of that.
9:42
So, take your vanilla wafers.
9:47
Yep. And we're going to place them in
9:49
the bowl.
9:52
I'm going to do them
9:55
the top side facing outward.
9:58
And then we'll put banana slices in
10:00
between and then build our way up. You
10:02
can do this any way you want. [gasps]
10:04
That's just the way I'm going to do it.
10:06
And we'll slice up some bananas.
10:11
calls for about four mediumsized
10:13
bananas.
10:18
Now, if you peel the banana from the
10:20
bottom upward, you don't get a lot of
10:22
the string.
10:24
[snorts]
10:31
All right. So, I'm just going to slice
10:33
them
10:37
that thick.
10:38
Place a cookie. the banana, the cookie,
10:41
and then I'm gonna keep doing that
10:44
to get a checkerboard look to it. Just
10:47
do it something like that. We are going
10:49
to take half of that pudding mixture and
10:52
put it in the center. We'll just pour it
10:54
in.
10:58
Here we go. Just half. Just smooth that
11:02
out.
11:05
We're going to layer some cookies on
11:06
top.
11:11
And then we'll put some sliced bananas
11:13
on top.
11:17
There we go. Because we're using a
11:19
vanilla pudding and so we want banana
11:22
flavor through there. And I don't want
11:23
artificial banana flavor through there.
11:25
So I am not doing the banana pudding.
11:29
Okay. You can if you want
11:32
give you more banana flavor, but like I
11:34
said, I don't want it like that. All
11:36
right. We're going to pour the rest of
11:38
the mixture on top.
11:44
There's nobody here right now to lick
11:45
the beater,
11:48
the spatula, and the bowl. So, I know
11:50
that's sad, isn't it? [sighs and gasps]
11:53
We're going to place the rest of that
11:56
Cool Whip that we saved. That's 4 oz.
12:00
Now, I'm going to dollop it. Make it
12:02
easier to spread.
12:04
Then I'm just going to kind of dollop
12:06
it.
12:08
I kind of want to cover the top here.
12:11
Leave an inch or so of that pudding
12:14
mixture free.
12:17
There we go. Now I'm just going to take
12:19
my spoon and do this. Get nice little
12:21
peaks.
12:24
Now we're going to take some vanilla
12:26
wafers and we're going to crush them on
12:28
top.
12:36
All right, you guys.
12:39
There's my banana pudding. What do y'all
12:40
think?
12:42
Oh, beautiful. Beautiful. Beautiful.
12:45
Beautiful. Now, if you have the
12:47
patience, you can put this in your
12:49
refrigerator, cover it with some cling
12:50
wrap, and let it chill so that that
12:52
pudding mixture sets up. Or you can dive
12:56
in with the biggest spoon you can find.
12:58
Yeah. Okay. and then enjoy your banana
13:03
pudding. All right, you guys, give me a
13:06
thumbs up on this one. If you're new to
