It's summertime and we are ready for a
0:02
peachy cake dessert made easy with boxed
0:06
cake mix. I'm making mini peach upside
0:10
down cakes.
0:12
The first thing you're going to need is
0:13
a standard 12-cup muffin tin. Now,
0:18
I have two of them that are six each.
0:20
These are the standard size and what
0:22
we're going to do is just prepare them
0:24
with some cooking spray to coat the
0:26
sides and the bottom. That way they're
0:29
easy to
0:30
pop out of there.
0:32
So, I'm going to take these over to my
0:33
sink and spray them in there so I don't
0:35
get spray all over the place.
0:39
Now, I'm just placing them on a sheet
0:41
pan. There's some oil around the sides
0:44
here and I don't want those leaking into
0:45
my oven, but we'll wipe those clean here
0:47
in a little bit. Go ahead and grab you a
0:50
stick of butter and we're going to be
0:52
using
0:54
three tablespoons and what I'm going to
0:56
do is cut these into the tablespoons.
1:00
That way we can evenly get 12 pieces of
1:04
butter.
1:06
So, I'm going to go one,
1:11
two,
1:12
and three.
1:16
And once you have your three,
1:18
we're just going to cut those into four.
1:20
So, you want to make sure that your
1:21
butter is just right out of the
1:23
refrigerator, nice and cold.
1:29
This is a great summertime dessert.
1:33
Cuz you know those fresh peaches are out
1:35
there.
1:36
Y'all probably already have some.
1:38
I'm fixing to show you what you can do
1:39
with them.
1:40
There we go.
1:42
All right. Now, I'm going to bring my
1:43
muffin tins back over
1:46
and we're going to place one piece of
1:49
butter into each
1:51
cup here.
1:53
There we go. Just as easy as peasy,
1:55
right?
1:57
Grab your brown sugar
2:00
and we're going to place 1 tsp of the
2:03
brown sugar into each
2:05
cup on top of that butter.
2:11
It doesn't have to be perfect.
2:14
Just get it in there.
2:18
It's going to all melt together
2:21
and get nice and ooey gooey in there.
2:26
Y'all know what an upside down cake is
2:27
like.
2:31
Almost the same concept.
2:34
It's a dessert, so it's going to be
2:35
sweet.
2:37
Put a little bit more in there.
2:40
There we go.
2:44
Now, we're going to take
2:46
some ground cinnamon and sprinkle a
2:48
little bit on each one on top of that
2:50
brown sugar.
2:52
Just a little poof.
2:55
That'll really liven up those peaches.
3:04
Now, I'm going to pop this in the oven.
3:05
I've already got it preheated to the
3:07
350°
3:09
and all I want to do is put that in
3:10
there for a just a few minutes to melt
3:12
the butter and the brown sugar
3:14
and then while that's happening, we'll
3:16
go ahead and work on our peaches and
3:18
you'll need three of them and I've
3:20
already cleaned these off. But right
3:22
now, I'm just going to take a piece of
3:23
paper towel and I'm just going to wipe
3:24
around the edges here so that the
3:27
excess spray
3:29
doesn't go into my oven.
3:32
So, you're going to take one of your
3:33
peaches, take a paring knife and you're
3:37
going to start where the stem is
3:40
and you're going to drag your knife
3:42
all the way through. Follow that
3:45
pit. Stay on it
3:47
and go all the way around at the peach
3:50
till you get to the other side.
3:53
One complete movement there.
3:56
And then what we're going to do is just
3:57
loosely
4:00
twist it.
4:02
Kind of like an avocado, right? Just
4:03
twist it
4:04
and pop it open like that.
4:06
And then we're going to get a spoon
4:09
and we're just going to pop out that pit
4:10
right there.
4:11
Just work it around it.
4:15
You can hear it popping.
4:17
There we go.
4:19
We're going to lay these
4:20
upside down on our cutting board and
4:22
then we're going to slice.
4:24
Now, what we're going to do is slice
4:26
very thinly, just like that.
4:34
Now, you see how thin these are getting?
4:37
That's really good. Right there is
4:38
perfect. And I think one peach may be
4:41
enough. If you get them really thin like
4:43
this, that's what you want so they get
4:44
nice and soft in the oven.
4:47
That's my oven right now.
4:50
We're going to go ahead and pull out the
4:52
muffin tins from the oven and the butter
4:54
should be melted.
4:57
All right, you're going to take three
4:58
slices of the peaches
5:02
and then we're just going to place them
5:03
in
5:05
like that.
5:08
Just be careful cuz that pan will be
5:09
hot.
5:11
Just like that.
5:13
They're going to pop up on you, but
5:14
that's fine.
5:18
Just kind of fanning them out.
5:27
Right, let's make the cake batter.
5:29
Right, to make the cake batter, we're
5:31
going to be using one box of classic
5:33
yellow cake mix
5:36
and you're just going to add that to a
5:37
large mixing bowl.
5:42
And then we're going to add in three
5:43
eggs
5:45
that I already have cracked and into
5:47
bowl there.
5:48
Make our life easy.
5:51
1 2 and 3.
5:53
Now, I diced up half of one of the
5:56
peaches there.
5:59
Cuz I didn't want to overflow our cups
6:02
over there, so.
6:04
And this will be plenty.
6:07
1 cup of milk.
6:11
And a half a cup of melted butter.
6:15
Or one stick.
6:17
Take an electric hand mixer and we're
6:18
going to beat this
6:21
for about 2 minutes to get it all
6:22
combined.
6:26
About halfway through, I'm going to take
6:27
a spatula, push down the sides.
6:31
And I'm going to add in some ground
6:33
cinnamon. Mimic that flavor a little bit
6:35
that's on the bottom.
6:38
Just a little bit.
6:40
Is that good? Yep.
6:42
And then we'll finish beating this
6:43
together.
6:47
You're going to take your ice cream
6:49
scoop or your large cookie scoop. We're
6:53
going to go into the batter, scoop it
6:55
out, flatten it out, and then we're
6:56
going to place it into each one of our
6:59
muffin cups.
7:04
And then just kind of let it naturally
7:06
fall in there. Now, just remember
7:09
these are the bottoms right here.
7:11
>> [laughter]
7:12
>> That's the top inside there.
7:16
That's the goal anyway.
7:18
All right, I'm going to place this in my
7:20
oven that's been preheated to 350°.
7:23
We're going to bake these for about 15
7:25
to 18 minutes, like a cupcake.
7:29
You're going to take a toothpick, you're
7:30
going to insert it in and pull it out.
7:32
If it's still got some batter on it, you
7:34
want to put it back in the oven for
7:35
another few minutes. Now, if it comes
7:37
out and it's a little wet, that's
7:39
totally fine. This just means that's the
7:41
peach that's in there. All right, then
7:43
we're going to pull these out of the
7:45
oven. We're going to let them rest for
7:46
about 5 minutes in their tins right
7:49
here, and then we're going to take a
7:51
spoon, go in around the edges of it, and
7:54
then we're going to pop them out onto a
7:57
wire rack, and then let them cool down
7:59
just a little bit. All right, you guys,
8:01
if you have leftover batter, you can
8:03
just put it into your smallest baking
8:05
dish and pop that in the oven along with
8:07
these and cook it off.
8:08
All right, these are nice and golden
8:10
brown. Now, I think what happened was I
8:12
overfilled
8:14
the tins here.
8:16
The recipe said a scoop, and I was
8:18
thinking like a big scoop to fill it up,
8:21
but I'm thinking they needed half of
8:23
that. So, what I'm going to do is since
8:25
these cooled off is I'm going to take
8:28
off the top layer. That's what I did
8:30
with the other tin, flip it over.
8:34
What are those called? Muffin tops?
8:36
>> [laughter]
8:37
>> I'm going to put them in a dish over
8:38
here.
8:38
>> [gasps]
8:39
>> And then what I'm going to do is take a
8:41
spoon,
8:43
I'm going to go around the inside, just
8:46
kind of loosen it up, and then we're
8:48
going to pop it out by going underneath
8:50
of everything.
8:52
Let me take the knife.
8:55
I'm going to take my plate,
8:58
and we're going to flip it over.
9:04
Like that. Now, that's the size that
9:06
they're supposed to be.
9:10
So, I'm going to do that with the rest
9:13
and then show you. We're going to save
9:14
that for Thomas. We'll put it in a
9:16
Ziploc bag and all the tops, and he can
9:18
have those, too.
9:19
>> Heck, yeah.
9:21
>> [gasps]
9:21
>> And we're going to
9:22
pop these off.
9:24
That's about what the size should be.
9:27
So, just go in with your spoon.
9:31
Go around the edges.
9:33
Scoop up underneath.
9:36
Pull the whole thing up.
9:38
And then place it on your container.
9:41
All right, I'm going to plate the rest
9:42
of them up.
9:48
Look at those peaches. Don't those look
9:49
delicious?
9:51
We saved the day. Look at those.
9:57
All right.
9:58
Serve these up with ice cream.
10:01
Let me give this a try for you. Ooh, I
10:03
can't wait to eat this.
10:09
Mhm.
10:17
If you've never tried a peach upside
10:20
down cake, you got to try these minis
10:22
right here.
10:24
That is so delicious.
10:28

10:41
episode. I'm going to try to get a bite
10:42
in before Thomas gets over here.
10:45
>> [laughter]
10:46
>> You know he's already had some. He had
10:48
those tops.
10:49
All right, I'll see y'all in the next
10:50
episode. Bye.
