Hello everyone. Welcome back to
0:02
Katherine's Plates. Today I am going to
0:04
show you how to make this delicious,
0:07
warm, comforting cornbread topped chili
0:11
pie. We are going to be using a Jiffy
0:14
corn muffin mix because it's America's
0:17
favorite and my dad's favorite, too.
0:20
This has been around since 1930, and he
0:24
loved a good cornbread. So does my
0:26
husband, Thomas. He's a fanatic for
0:29
cornbread, so he loves this dish. All
0:32
right, we're going to come up here.
0:33
We're going to put this one together
0:35
easily enough. Y'all come on up and let
0:37
me show you everything you're going to
0:38
need so you can grab it out of your
0:39
pantry and have it ready to go. Now,
0:42
this recipe can be found in my second
0:44
cookbook, and it's the full recipe.
0:47
Today, I am making half of that recipe
0:49
because it's just Thomas and I. And
0:51
you're going to need ground beef, some
0:54
tomato paste, green onions, some sharp
0:58
cheddar cheese, sour cream,
1:02
some corn, chicken broth, a can of diced
1:06
tomatoes, some milk, one egg, some diced
1:11
onion, a pack of chili mix,
1:16
some garlic, some olive oil, which for I
1:20
don't know if y'all can sit right there.
1:21
And then America's favorite Jiffy corn
1:25
muffin mix. Just one box. All right,
1:27
let's go ahead and get started. Now, for
1:29
this recipe, I generally like to be in a
1:33
skillet that you can put into the oven,
1:37
like a cast iron skillet or an
1:39
enamelcoated skillet, whatever you got
1:42
that'll fit, that is ovenproof.
1:44
Now, if you don't have that, that is
1:46
totally fine because you can make the
1:48
whole mixture in your skillet and then
1:51
pour it into a baking dish and then top
1:53
it with the cornbread mixture. So,
1:59
but it looks so cool when you do it like
2:02
this. So, I am browning up one pound of
2:05
ground beef in a deep skillet. And then
2:08
I'm going to take one onion and I'm
2:10
going to take off both ends. Take off
2:13
that outer layer. And then we're going
2:19
So, we're going to cut the onion in
2:21
half. And then we're going to run our
2:22
knife along the lines of the onion to
2:25
make strips. And then we'll turn it. And
2:27
then we'll make dices from it.
2:32
There we go. There's half. And we'll
2:34
take care of the other half.
2:38
Just watch your fingers. Tuck them in.
2:44
These will soften down.
2:50
All right, we're going to add in the
3:00
Now that we got the ground beef nice and
3:02
browned up and the onions nice and soft,
3:04
you want to drain out any excess grease
3:09
And then we're going to add in one
3:12
teaspoon of minced garlic.
3:17
We're going to stir that in.
3:20
Release the fragrance from the garlic
3:26
Sometimes I like to add just a little
3:32
Really pop the flavor out.
3:36
Smells really good in there.
3:39
All right, let's start flavoring this
3:41
up. We're going to add in one pack of
3:44
chili spice blend. I'm using the mild.
3:57
Be careful when you open it. Seasonings
4:08
That smells good in there. We're going
4:11
to add in one cup of chicken broth.
4:18
One can of corn. This is 11 oz.
4:25
One 14 oz can of diced tomatoes with the
4:32
One tablespoon of tomato paste.
4:38
right, we're going to mix this all
4:43
Now, we're going to simmer this for five
4:45
minutes, but I'm going to check for
4:46
seasoning and make sure we don't need to
4:47
add any salt or pepper to it.
5:00
I might add a little bit of salt.
5:04
Mix that in. Simmer for 5 minutes.
5:08
And then while that's happening, we're
5:10
going to make our cornbread topping.
5:15
In a medium bowl, we're going to whisk
5:16
in one package of the Jiffy corn muffin
5:20
mix. And this is 8.5 oz size.
5:28
And to that, we're going to add in 13
5:36
We're going to crack in one egg.
5:49
And we're going to add in about half a
5:52
cup shredded cheddar cheese.
5:57
Take a fork and blend this all together.
6:11
All right, we're going to turn off the
6:14
and then we're going to spread this
6:15
mixture of the cornbread all over the
6:17
top of our meat mixture.
6:25
Just kind of go all over with it.
6:30
We'll get a spatula here.
6:38
And then you just want to smooth evenly.
6:42
You don't want to mix it in, but just
6:46
I'm going to leave a little of the
6:47
edging. People can see what's in there.
6:53
And top with a little bit more cheese.
6:59
I've got my oven preheated at 375°.
7:03
We're going to place this in the oven
7:05
and bake it for 35 to 40 minutes until
7:08
that cornbread mixture on top is cooked
7:12
through. Now remember, I am using an
7:14
ovenproof pan. If you don't have one,
7:18
then you can, you know, you could have
7:20
poured that meat mixture into a baking
7:22
dish and then put the cornbread mixture
7:25
on top and then bake it in the oven like
7:26
that. So, you're good either way. I'll
7:29
be back. Give this a try for you. Okay,
7:32
you guys, look at this cornbread topped
7:36
chili pie. Now, I did sprinkle a little
7:39
bit of green onion when it came out of
7:40
the oven just to kind of give it a pop
7:42
of color. I let this rest for about five
7:45
minutes or so just to kind of pull
7:46
itself together. Let's dive in.
8:12
A little bit more of the green onion.
8:20
Some more sour cream. There we go.
8:31
Oh, that looks so delicious.
8:34
Let me grab a fork. Let's give this a
8:52
It's got a very warm, comforting feel to
8:54
it. I love this for August, any month,
8:58
actually. Right. Wow. I love that
9:01
cornbread on top. There's just a little
9:03
sweetness to it, which I love about that
9:05
Jiffy corn muffin mix. Thomas likes
9:10
All right. I like the little bits of
9:11
corn in there. Top it with some sour
9:14
cream and a little green onion for a
9:15
little punch of color and and flavor
9:18
there. All right, you guys, let me know
9:20
what you think of my cornbread topped
9:22
chili pie. Remember, it came out of my
9:24
second cookbook that I got sitting over
9:27
here. You can find that in my
9:28
description box down below.
9:31
And this recipe is also you can find in
9:35
All right, you guys. I'll see y'all on
