Merry Christmas everyone. Welcome back
0:02
to Katherine's Plates. Today we are
0:05
going to make orange cranberry bread for
0:08
Christmas. Now, this is my mom's recipe.
0:11
She makes this every year along with
0:14
other goodies for the holidays for
0:16
family and friends, and we're always
0:18
excited to get it from her. But I wanted
0:21
to make this recipe for you guys. So, I
0:23
asked her if that was okay, and she
0:25
said, "Of course." Now, if you don't
0:27
know my mom, go check out that cherry
0:29
mash. We made that one together in her
0:31
kitchen. All right, you guys. Grab a bag
0:35
of fresh cranberries. You need 12 oz.
0:39
What we're going to do is open them up.
0:41
We're going to put them into a strainer.
0:44
And then, you know, we're going to give
0:46
them a good rinse, clean them off, check
0:48
for any
0:51
that's not a cranberry in there.
1:01
All right, I'm going to check through
1:02
these, give them a good rinse. We're
1:03
going to come back so we can dry them
1:05
off.
1:09
All right, you're just going to take a
1:10
towel, your kitchen towel, and we're
1:12
just going to kind of dry these off.
1:14
We're going to go get that one that
1:15
escaped over the side.
1:25
Okay. Now, you want a half that bag of
1:28
cranberries. You need one and a half
1:30
cups, which I thought was 12 ounces. Not
1:33
when it involves cranberries. All right.
1:35
So, one and 1/2 cups. Measure them out.
1:37
And it's probably about half your bag
1:39
there. We're going to zest two oranges.
1:44
So, just go all the way around the
1:45
orange. Now, I did wash off my oranges
1:48
really good.
1:50
We'll
1:54
give it a nice zesty
1:57
flavor going on. It is an orange
1:59
cranberry bread, so we need the orange.
2:02
Now, when you do this, make sure you
2:03
don't go all the way to the white of the
2:05
orange because you don't want it to be
2:06
bitter.
2:08
Now, as you can see, this is what I did
2:10
on this one right here.
2:12
All right, got to the end of that one.
2:18
Get all that on there. All
2:20
right, that looks good right there.
2:21
About one tablespoon.
2:23
All right, we're looking for about a/4
2:25
cup of the squeezed orange juice.
2:29
All right, now we're going to start with
2:31
some dry ingredients. We're going to add
2:33
1 and 1/2 cups of allpurpose flour into
2:37
a large mixing bowl.
2:44
Yeah.
2:48
Can't believe I got the recipe.
2:56
Now, she makes minis and gives them out
2:58
like that. I'm going to be making the
3:00
big loaf.
3:06
All right. To that, we're going to add
3:07
3/4 cup of white granulated sugar.
3:10
already measured that out.
3:14
And then we're going to add in 1 and 1/2
3:16
teaspoon of baking powder.
3:23
Let's get a half.
3:27
There we go.
3:30
Want it to rise. And then we're going to
3:34
add in
3:36
a/4 teaspoon of salt.
3:44
And then you're going to grab a whisk
3:46
and blend that all together. Now, this
3:49
is a technique.
3:51
Certain ways you put this together. Once
3:54
you get it all whisked together,
3:58
we're going to add in the orange zest.
4:04
All in there.
4:07
That smells good.
4:09
And then we're going to add in our 1 and
4:12
1/2 cups or 6 oz
4:15
of our cranberries that we had dried
4:17
off.
4:19
We're going to get a spatula
4:22
and we're going to coat everything very
4:24
well.
4:30
That'll keep those cranberries from
4:32
sinking in your bread mixture.
4:38
Get them nice and coated. All right,
4:41
we're going to set this aside now and
4:43
bring over our small medium bowl.
4:48
Now, we're going to add in our wet
4:50
ingredients. So, we're going to start
4:51
off with two eggs.
4:59
I'm going to give that a little mix.
5:09
We're going to add in five tablespoon of
5:12
melted butter. Now, I cooled this down a
5:15
little bit because you don't want to add
5:16
hot melted butter into your eggs or
5:19
they'll scramble. Now, my eggs were
5:22
brought to room temperature.
5:25
Got that in there. We're going to add in
5:28
1/4 cup of milk, which we brought to
5:31
room temperature also.
5:36
We'll get that out of the way. And then
5:38
we're going to add in 1/4 cup of our
5:41
squeezed fresh orange juice.
5:45
And then we're just going to blend that
5:46
all together.
5:50
Whisk it. And as you can see, we did not
5:54
get scrambled eggs.
5:56
All right, we're going to bring over our
5:58
fled cranberries. All right. That's why
6:02
we started off in the large bowl so that
6:05
we can add the wet ingredients that we
6:07
combined into the flour and cranberries.
6:16
All right, we're going to use the
6:17
spatula and we're going to fold
6:18
everything together. We don't want to
6:21
over mix, just until everything is well
6:23
combined. Oh, it looks so festive in
6:26
there with those cranberries.
6:29
I hope I do. do my mom's recipe proud.
6:33
This is the first time I've done it.
6:36
Think we got a good mix on it. Look down
6:39
there at the bottom. Oh, I can see the
6:41
orange specks in there from the orange
6:44
zest.
6:46
Does look good.
6:50
There we go.
6:54
All right. Now, we're going to take a
6:56
loaf pan. This is kind of like a
6:58
meatloaf pan or a banana bread pan,
7:00
whatever you're using. This is a 9 in x
7:03
5 in by 2 in.
7:06
We're going to spray that with some
7:09
non-stick cooking spray that has flour
7:11
in it. Or you can even grease it and
7:14
then flour it and shake out the excess.
7:16
I like the baker's joy here. Just so
7:19
easy to use.
7:25
There we go. Make sure you get the
7:26
sides.
7:29
And then we're going to put the mixture
7:30
in.
7:46
All right.
7:48
Going to smooth it out nice and even.
7:53
Right. We're going to wipe off any of
7:54
the excess around the edges here.
8:00
You want that to bake on there. Won't
8:01
look as pretty.
8:04
Now, if you have the minis, I think this
8:06
will fit four to five of them, I believe
8:08
she said.
8:12
All right. I've got my oven preheated at
8:15
350°.
8:17
We're going to bake this for about 50
8:20
minutes till it's completely cooked
8:22
through, nice and golden brown on the
8:23
top. Take a toothpick, put it into the
8:26
center of your bread, pull it out, and
8:28
it should come out nice and clean. Now,
8:31
if you're doing the minis, she said at
8:34
350° for 25 to 35 minutes. And you can
8:39
do those. All right, we're going to come
8:42
back. I'm going to cool this for about
8:44
15 minutes and then we're going to make
8:46
a delicious glaze to go on top.
8:50
All right, you guys. Doesn't that look
8:52
beautiful?
8:54
Now, I waited about 20 minutes to pull
8:57
it out of the pan. I just took a knife
8:59
and went around the edges of the baking
9:01
dish and then popped this thing out. It
9:04
looks gorgeous, huh? We're going to make
9:05
a delicious glaze. I'm going to be using
9:08
3/4 cup
9:11
of some powdered sugar. Just put it in a
9:14
medium bowl.
9:18
And I'm just going to uh whisk that up
9:21
just a little bit. Break up any lumps.
9:26
And then what we're going to do is take
9:28
that freshlysqueezed orange juice. And I
9:30
got about two tablespoons of it. We'll
9:32
add it in a little bit at a time till we
9:35
get a nice thick drizzle
9:39
for our orange cranberry bread. All
9:42
right, let's add it in.
9:48
Now, if it's too thick, you can add a
9:50
little bit of milk to it. And if it's
9:53
too thin, just add some more powdered
9:55
sugar to it.
10:01
Perfect.
10:03
All right, let's drizzle.
10:07
There we go.
10:15
We have cooled it down completely.
10:22
Look at that, you guys.
10:24
All right, we're going to use a bread
10:26
knife. We're going to slice into it.
10:37
There we go.
10:44
Here's my orange cranberry bread. This
10:47
is my mom's recipe.
10:52
Oh.
10:56
Oh my gosh. And that glaze with that
10:58
orange juice. It's going to be
11:00
delicious.
11:13
I love those bursts of those
11:15
cranberries.
11:17
And that batter that is very light, very
11:21
fluffy.
11:23
It's got a delicious texture to it.
11:27
Yeah, look at that.
11:30
Y'all need to make this one. Merry
11:33
Christmas everybody. Happy holidays. I
11:35
