0:01
Hello everyone. Welcome back. Today I am
0:05
going to make a very versatile soup. I
0:08
love this recipe because it can change
0:11
in many, many ways. And one of the ways
0:14
that I make this soup is in one of my
0:17
cookbooks and it's called hamburger
0:21
And I love this recipe. You got ground
0:23
beef going on. You can grab all of your
0:25
vegetables from your pantry or your
0:28
freezer or your refrigerator.
0:31
And then you can add those into this
0:32
soup. It's going to have a tomato beefy
0:35
broth to it with some seasonings. And
0:38
then you can also do like some potato in
0:41
there if you want a starch in there. Or
0:43
another carb, you can add pasta to this.
0:47
Now, this recipe right here has frozen
0:49
tortellini in it. But you can use like
0:52
pantry pasta if you want to do that.
0:55
Just remember it takes a little bit
0:56
longer to cook that. All right, so I've
0:59
got 1 lb of ground beef that I'm
1:00
chopping up in my big Dutch oven here.
1:04
And while that's browning up, we're
1:06
going to go ahead and start adding some
1:07
flavor to it. And I'm going to dice up a
1:11
Now, I've taken both ends off of a
1:12
yellow onion and I've just taken the
1:14
peel off. Let's cut it in half.
1:17
We're just going to run our knife
1:22
My soup is going to be very chunky, so
1:25
I'm going to keep the onions that way
1:26
also. I don't want to lose the onions
1:28
and have them melt in the soup.
1:30
If you want to do that, then you can
1:32
just dice them smaller.
1:34
Then I'm going to turn the slices around
1:35
and just run my knife through
1:37
till we get those dices.
1:42
That looks good right there.
1:46
Now, once we get this all chopped up,
1:48
we're going to add it to the ground beef
1:50
so we can start flavoring it up.
1:53
Now, if there is one person in my family
1:55
that loves a good hamburger, vegetable
1:57
soup, that is Breanna.
2:01
She's an adult, but let me tell you, she
2:03
will come over here for this soup.
2:05
She's always requested this soup. I had
2:08
to make a big super big batch for her.
2:13
And I like this soup because
2:16
when you let it sit overnight, the
2:18
pasta, the potatoes, and the vegetables,
2:21
they just absorb that broth, and then it
2:23
becomes almost like a meal.
2:26
A very hearty meal you can just use with
2:28
a spoon or a fork. All right, let's go
2:31
ahead and add that to the ground beef.
2:39
Now, I want to give the onions a good
2:41
head start, so they're going to cook
2:43
with the ground beef until the ground
2:44
beef is nice and browned up, no longer
2:47
pink, and the onions are soft.
2:55
even semi-homemade, but happiness is
3:01
>> All right, so the ground beef is browned
3:03
up, the onions are nice and soft in
3:04
there, looking good. What I'm going to
3:06
do is drain the excess grease out of
3:08
here, and the easiest way to do that is
3:10
just take some paper towels, wad them
3:12
up, put them down in there,
3:15
and just get that grease up.
3:20
All right, just push it around. Push it
3:22
around. Tell it who's boss.
3:28
>> All right, that looks good.
3:30
Let's start flavoring it up.
3:36
about 2 tsp of minced garlic.
3:41
I'm going to get another utensil.
3:50
We're going to mix the garlic into the
3:52
ground beef and the onion for 1 minute.
3:55
Release those aromas.
3:58
Make that ground beef taste good.
4:04
While that's happening, we're going to
4:11
On top of the garlic, yes. Flavor. Onion
4:20
>> Y'all, who's in the kitchen? Yes, he
4:22
can't wait for a bowl of this.
4:25
Some black pepper. Load it up.
4:31
>> Y'all see blue black pepper at me making
4:33
me sneeze. [laughter]
4:38
it's pink. We're using the pink
4:40
Himalayan salt. We use it for
4:45
Get those seasonings all stirred up into
4:48
that ground beef and onion.
4:53
Yeah, so far so good.
4:56
I've made this soup so many times in so
5:03
All right, I'm going to be using one
5:04
can. This is the fire roasted diced
5:07
tomatoes. If you don't want them fire
5:09
roasted, just get the regular ones.
5:12
This is a 14 oz can and we're going to
5:14
add it in, juice it all.
5:24
There's a frisbee thrown to the sink.
5:28
Ooh, you see all those little black bits
5:30
in there? That's roasted tomatoes.
5:33
That's what I'm using right here.
5:36
We're going to stir all that in.
5:39
Need something so we can get the bottom
5:43
It's all flavor down there.
5:45
That juice will help do that. Woo.
5:48
Just keep doing that until it's nice and
5:50
smooth down there. It's all flavor
5:52
anyway. We started with a clean pot.
5:55
Now, this is going to be a fast soup.
5:58
I'm not going to be chopping up or
5:59
dicing up any vegetables from our
6:02
refrigerator. I've got those in mind for
6:04
something else. But right now, this is
6:05
more of a pantry soup cuz we've got the
6:07
canned tomatoes and the canned
6:09
vegetables right here. I'm using peas
6:18
and whole green beans. And we're going
6:25
So, y'all let me know down below, what
6:27
do you put into your soup? I've done
6:30
cauliflower, broccoli with potatoes.
6:33
Yeah. Squash, zucchini. I mean, when
6:37
winter comes and it's like really cold,
6:39
we will be doing that. I mean, it's
6:41
going to be a big batch. All right. I'm
6:43
going to strain everything into this
6:47
And then we'll add it to the soup.
6:56
Got the corn drained.
7:00
And the green beans drained.
7:06
Let's mix this all in.
7:13
All right, let's add the broth.
7:15
You're going to need about six cups of
7:17
beef broth. However you get it in there.
7:26
jars, make your own broth, whatever
7:36
And then we're going to do two, and then
7:38
keep the other two on hand in we need it
7:42
when we're cooking the pasta.
7:49
Right, let's stir that all up. And then
7:51
we're going to add in our pasta.
7:56
Now, I've got some bow tie pasta that I
7:58
had in a bag in the pantry.
8:02
You're all familiar with the farfalle?
8:04
Is that what it's called? So, it looks
8:06
like little bow ties. Right, so we're
8:07
going to add that in.
8:09
Whatever you want, 8 to 10 oz or more.
8:16
We're going to put this on a high heat,
8:18
bring this to a boil.
8:21
And we're going to let it simmer
8:24
until the pasta is cooked through nice
8:27
and tender. And if you're using
8:30
refrigerated vegetables and you're
8:32
chopping them up and you're putting them
8:33
in there, you want to make sure that
8:34
those are nice and tender also before
8:36
you turn your soup off.
8:39
before we do anything, grab a spoon and
8:42
check for seasonings.
8:48
I'm thinking a little more salt, pepper,
8:52
and garlic powder. All right, salt,
9:02
onion powder, come on out.
9:06
And you know what else? I forgot one
9:08
thing. We're going to put it in there.
9:12
Yep. Couple teaspoons or so.
9:15
All right, we'll get this mixed up.
9:20
Make sure you put this on a high heat,
9:24
Lower it to about a medium-high heat.
9:28
And then that's it. Now, I did bring
9:30
over a fresh clean spoon. Sometimes
9:32
y'all don't see everything, but I'm
9:34
going to make sure y'all saw about
9:39
Woo! Now, that is delicious.
9:48
Now, the trick to soup is if you want it
9:51
really soupy, leave the lid on it while
9:57
If you want more of the vegetables,
9:59
ground beef, and the pasta, and less of
10:03
remove the lid and let it kind of
10:04
evaporate while it's cooking. It'll get
10:06
it thicker for you. All right, look at
10:09
this. Look. Oh my gosh.
10:13
It smells amazing. I'm going to bowl
10:15
this up. I'm going to give this a try
10:17
for you. It's our first soup of the
10:20
season. What do y'all think?
10:22
This will always be the best soup of the
10:28
It is so versatile, full of flavor.
10:31
You can do just about anything to it.
10:33
Even top it with a little bit of cheese,
10:35
cuz that's how my family likes it.
10:53
You feel that warmth from your head all
10:55
the way down to your toes.
11:01
We're in Southeast Texas, so we have air
11:04
That always helps when you're making the
11:06
first soup of the season.
11:09
>> But y'all, come on.
11:11
Y'all cook everything in a Dutch oven or
11:13
even a skillet meal, right, for 30
11:15
minutes? That's what this took, 30
11:18
You can lessen that soup in there and
11:20
just make it a full-blown meal. It'll be
11:23
so delicious, kind of like a hamburger
11:24
helper. All right, thumbs up on this
11:28
hype, share, comment, and if you're new
