Welcome back everyone to my kitchen. I'm
0:02
Katherine with Katherine's Plates. Today
0:05
I'm going to show you how to make a
0:07
cool, refreshing, no bake ice box
0:11
dessert. This one is called Strawberry
0:14
Crackle Salad. And if you know, you
0:16
know. Strawberry Crackle Salad is a take
0:19
on that strawberry salad that had that
0:22
pretzel layer, the cream cheese layer,
0:24
then it's got that Jell-O strawberry
0:27
layer in it. It's so delicious. Right.
0:29
taking a lot of that work out of it for
0:31
you. And we're just going to layer it in
0:33
a bowl. Be done with it. Now, it's going
0:36
to be sweet. We got our strawberries for
0:38
that. It's going to be crunchy. So,
0:41
we've got our pretzels for it. And it's
0:43
going to be creamy. And we got our cream
0:45
cheese for it. And we've got a few other
0:48
ingredients to kind of pull it all
0:50
together for this light, refreshing
0:52
dessert that we all need right now. All
0:54
right, you guys. Grab your pretzels. any
0:57
type of pretzel you have. And then we're
0:59
going to get a Ziploc bag and break
1:01
these up just into pieces. Now, the
1:04
first thing that we want to do is to
1:07
crush up the pretzels. And I'm just
1:10
going to use a Ziploc bag because I
1:11
don't want to pulverize these into
1:13
crumbs. I want pieces. We're going to
1:16
measure out two cups once we get these
1:18
broken up into pieces. We'll do that
1:20
right there. Take the air out of your
1:22
bag, seal it, and then we're going to
1:25
crush. We're going to put some pecans in
1:28
this mixture. Also, we want the pretzels
1:31
to be about the size of chopped pecans.
1:34
That's what we're looking for. Oh, yeah.
1:38
cuz you definitely want the texture in
1:42
So, I'm going to pour these into a
1:43
measuring cup and see if I need to do
1:49
That looks good right there. So, what
1:52
we're going to do is add this to a large
1:59
we go. Now, to that, we're going to add
2:03
in chopped pecans. Now, ideally, what I
2:07
like to do is because there's going to
2:09
be cream cheese in this recipe and it
2:10
needs to be softened down is that when
2:13
you're ready to start making this recipe
2:15
to get to that stage, I would have
2:17
already pulled out my cream cheese about
2:19
30 minutes beforehand and then let it
2:22
sit on the counter another 30 minutes.
2:24
while you're getting everything else
2:28
All right, one cup. Then we're just
2:30
going to add those to the pretzels.
2:35
Now, to that, we're going to add in half
2:38
a cup of brown sugar.
2:42
Every layer we're going to make nice and
2:44
sweet. There we go. We're going to take
2:46
a stick of butter. We're going to put it
2:48
on a microwave safe bowl and we're going
2:50
to melt it completely.
2:52
like let's add it in.
2:59
All right, just take a spatula and blend
3:00
it all together. You want those pretzels
3:03
and those pecans to be equally coated,
3:10
Y'all, this would make a great potluck
3:11
recipe. Also, you can double it up. take
3:16
or just cool it and chill it in your
3:18
refrigerator and just have it for any
3:20
kind of desserts, pool parties,
3:23
barbecues, whatever you have going on.
3:27
We got to try one. Make sure it's nice
3:39
You like those sweet pretzels?
3:43
We're going to set this aside because
3:45
now we got to make that cream cheese
3:47
mixture. So, in a medium bowl, we're
3:49
going to add in our softened cream
3:52
cheese. Now, if you're just pulling this
3:55
out of the refrigerator, take it out of
3:57
its wrapper. Place it on a microwave
4:00
safe plate and you can put it in the
4:01
microwave for about 10 seconds. Check
4:03
it. Give it another 10 seconds and check
4:05
it. You do want the cream cheese to be
4:14
To the cream cheese, we're going to add
4:16
in 1/3 cup of white granulated sugar.
4:23
And then we're going to add in one
4:24
teaspoon of vanilla extract. Give this
4:31
Now, we're going to take the electric
4:33
hand mixer and we're going to beat the
4:34
cream cheese, sugar, and vanilla
4:36
together until it's nice and smooth.
4:42
Make sure you give it a good minute or
4:44
so to get it nice and creamy.
4:47
Now, that's the last time we're going to
4:48
be using the electric hand mixer.
4:51
So, I'm just going to take my spatula
4:53
and just kind of pull off any excess. We
4:55
need this to be even more creamy. Guess
5:00
8 oz of Cool Whip. Now, you want to make
5:03
sure that this is thought out. We're
5:05
going to add it in and then we'll fold
5:07
it in with that cream cheese mixture.
5:09
Now, if you're going to take this to a
5:11
barbecue or a potluck or anything like
5:14
that, I would be doubling this recipe.
5:17
Pull from the bottom and in through that
5:20
cool whip. And we're just going to keep
5:22
doing that until that cream cheese
5:23
mixture is well blended in. This looks
5:26
good right here. Nice and combined.
5:37
We need some layers. Let's build this
5:39
up. All right, we've got our pretzel
5:41
mixture here. I'm going to put half of
5:43
it in the bottom of a baking dish here.
5:46
This is a two quart 8 by8.
5:53
Yeah, you just want enough saved for the
5:56
top just to give you a little crunchy
5:58
topping at the top. So, I'm going to
6:00
flatten this out. Now, you don't want to
6:02
like squish it in. You don't have to do
6:05
This is just going to be a salad, but
6:08
you do want a nice layer down there so
6:10
that you can see that. Now, what we're
6:12
going to do is take that cream cheese
6:15
whipped topping mixture. I'm just going
6:18
to dollop it all over till we get a nice
6:21
even amount in there. And then we'll
6:24
I think that's good. There we go. All
6:27
right. Grab offset spatula and then just
6:30
kind of smooth it out.
6:34
Nice even layer there. It's just for
6:37
Thomas and I this week because we don't
6:39
have anybody visiting with us that we
6:41
know of this week. All right, what do we
6:43
got going on? Woo! Look at that. Yeah.
6:45
So, I've taken a pint of strawberries
6:48
and I'm just slicing them. I've already
6:50
washed them off really well and I'm just
6:53
slicing them kind of at a diagonal,
6:57
whatever you want. And I'm going to
6:59
start putting them onto the dish here.
7:01
That way I know how many to slice
7:05
And I'm just going to cover the whole
7:10
And you can put them on here any way you
7:16
All right. Now, let's finish topping
7:17
this off. We're going to take the rest
7:19
of the pretzel mixture and just kind of
7:21
sprinkle it on top of the strawberries.
7:26
That'll give it a nice crunch on the
7:29
All right. There we go.
7:32
Now, this is when you put it in the
7:34
refrigerator to get it nice and chilled.
7:38
We're not waiting. I am going to go in
7:40
with a spoon and give this a try for
7:42
you. Look at those layers. We got that
7:46
pretzel layer, the cream cheese layer,
7:49
the strawberries, and then topped with
7:51
the rest of those pretzels.
7:55
It's one of those scooping desserts.
7:58
Look at that. Look at those layers.
8:05
All right, I'm going to grab a fork and
8:06
give it a try for you.
8:08
Sweet, crunchy, and creamy. Let's see if
8:27
Bliss Bite. That's what it tastes like.
8:36
Who's on board with me? I'm fixing to do
8:40
All right, you guys. It's summer time.
