Welcome back everyone to Catherine's
0:02
Plates. Today I'm going to show you how
0:03
to make a cherry limeade poke cake made
0:08
easy with boxed cake mix. We're going to
0:11
turn this classic white cake mix into
0:15
something a summery. We all know what a
0:18
cherry lime is from Sonic. And if you
0:21
don't like cherry, turn it to strawberry
0:24
limeade. All right, you guys, grab your
0:26
box. Let's get busy. That's the first
0:28
step to make the cake. Now, as we're
0:30
following along, the ingredients are
0:32
going to be just a little different when
0:34
you make this boxed cake mix. So, follow
0:37
along with that. This is a 15.25
0:40
oz size box.
0:44
Now, what I'm going to do,
0:46
toss that out of the way. I've got three
0:49
eggs, and we're going to need the whites
0:51
of the eggs. So, what I'm going to do
0:54
is crack these eggs and then split them
0:56
up between the yolk and the white.
1:00
So, just give it a crack.
1:02
Split it open.
1:05
And then you're going to drop the white
1:06
into the bowl.
1:08
And then go back and forth with your
1:10
yolk just to get any of the whites out.
1:13
And then just put the yolk to a separate
1:15
bowl. We're not going to use that for
1:16
this recipe.
1:19
Just give it a crack on the side of your
1:21
bowl.
1:22
And then you're just going to pull the
1:23
shells apart.
1:26
Hang on to it.
1:29
And let the whites fall in, not the
1:31
yolk. Get the yolk back out.
1:35
And we'll put that in there.
1:37
And get rid of the shell.
1:39
It's as simple as that. Make sure that
1:40
when you pull them apart, hold on to it.
1:43
There we go.
1:45
Don't use. All right, bring my mix over.
1:48
And then we're going to add in the
1:50
whites.
1:52
Let's take a lime. Now, I've already
1:54
scrubbed it off really good. And get
1:56
your zester, and we're going to zest
1:58
around the whole lime
2:00
into the cake mix. Ooh.
2:02
That woke up a flavor and just keep
2:04
going around the lime. Now, Thomas and I
2:06
like to drive around the countryside
2:08
around our area
2:11
and we stop by Sonic and pick up a
2:13
cherry limeade and
2:16
I think of tots. And then we just get
2:19
out of the house and go and just he
2:22
loves the countryside driving.
2:25
Just to get out and get away from the
2:27
traffic, get away from the people and
2:28
just drive around and he likes that. So,
2:32
we don't do it very often, but it's one
2:34
of our favorite things to do.
2:37
All right, y'all see all those flakes in
2:38
there? Hang on to this lime because
2:41
we're going to need it at the end of the
2:42
recipe. We're going to take 1/3 cup of
2:45
melted butter and we're going to add it
2:47
in.
2:49
We're going to measure out 1 and 1/4
2:52
cups of Sprite or any other type of
2:55
lemon-lime soda.
3:01
There we go. And we're going to add that
3:02
to the mix.
3:05
Ooh, look at that foam in there.
3:07
Now, we're going to take an electric
3:09
hand mixer and we're going to blend this
3:10
together
3:11
till everything is well combined.
3:15
Get you a spatula and we're going to
3:16
pull down the sides as we go along.
3:18
I love those little green specs in
3:20
there.
3:22
All right, we're going to spray a 9 by
3:24
13 baking dish with some nonstick
3:26
cooking spray. Now, when I'm baking
3:28
cakes or anything like that, I generally
3:30
like to use the Baker's Joy cuz it's got
3:32
flour in it.
3:34
And that just kind of helps you release
3:35
the cake.
3:40
Hold your breath, move off to the side
3:42
and let that fog of spray out of the
3:44
way. Bring your dish over, bring your
3:46
bowl of batter over and pour it in.
3:50
Smooth it out.
3:53
Yeah.
3:55
We're going to pop this in the oven
3:56
that's been preheated to 350°.
4:00
We're going to bake this for about 30 to
4:01
35 minutes till it's nice and kind of
4:04
golden on the top. The edges have pulled
4:06
away slightly. Take a toothpick, insert
4:08
it into the center of the cake. If it
4:11
comes out clean or has a few crumbs on
4:13
it, it's
4:14
it's totally done.
4:15
If it's still got a little batter on it,
4:17
just pop it back in the oven for a few
4:18
more minutes. All right, you guys, we'll
4:20
be back because the best is yet to come.
4:23
Now, the cake is cooled down completely.
4:25
It takes over an hour to do that. If you
4:27
put it on a wire rack, it really helps
4:28
to get that bottom of the cake nice and
4:30
cool. Then we're going to take a kitchen
4:33
utensil or a large straw. You want to
4:35
use the end of it to poke holes all
4:38
through the cake.
4:42
Cuz we want to put the mixture in and
4:45
have every bite
4:47
be able to have that cherry flavor to
4:50
it. Cuz that's what's next. Now, we're
4:52
going to make the cherry filling.
4:55
The next step is to just take a small
4:57
pot, fill it with water, and bring it to
4:59
a boil. We definitely want boiling water
5:01
for this step. I'll be back when it's to
5:04
a boil.
5:05
We're going to take one box of cherry
5:08
Jell-O flavor mix. It's a gelatin. And
5:11
it's 3 oz. And we're going to place that
5:13
into a small bowl. This is what's going
5:15
to give it that red color to the
5:18
dessert.
5:21
All right, what we're going to do
5:23
is add it to the Jell-O mix. I got a
5:26
small whisk here. We're going to blend
5:27
it in.
5:29
And then stir it until the sugars
5:31
are all dissolved.
5:34
Now, I'm going to cool down the Jell-O
5:35
somewhat. While I'm mixing it, I'm just
5:37
going to put it into another bowl that
5:39
has some ice in it.
5:41
And while I'm whisking,
5:42
cool that Jell-O down before we pour it
5:44
on the cake. Now, we weren't looking to
5:45
get that ice cold. Just take that heat
5:48
off of it. Now, I'm just going to take a
5:50
a ladle and I'm going to take it and I'm
5:52
going to pour
5:54
the Jell-O into the holes as much as
5:55
possible.
5:58
You can smell the cherry for sure. And
6:00
just keep doing this until the cake is
6:02
nice and saturated with the Jell-O.
6:09
We're going to take an 8-oz container of
6:12
Cool Whip, thaw it out.
6:16
And I'm going to spoon it all over the
6:18
top of the cake.
6:20
All right, let's spread it out. Now, I'm
6:22
using an offset spatula cuz I tell y'all
6:24
this every time. It's just so easy to
6:26
spread.
6:29
We're going to be decorating the cake
6:31
once it's been set up. All right, I'm
6:34
going to clean up the edges and bring
6:35
you back.
6:36
Now, I'm going to cover this. I'm going
6:38
to place this in the refrigerator for 2
6:40
hours. That will help the Jell-O set up
6:43
and the Cool Whip. And then I'm going to
6:45
decorate it. Okay, it's chilled for 2
6:47
hours. We're going to decorate. We're
6:49
going to take the second lime, scrubbed
6:52
it really good, take your zester,
6:54
and we're going to zest it all over.
6:58
All right, look at that zest on there.
7:01
Now, I'm going to take a jar of
7:04
maraschino cherries. You're going to
7:05
need to 12 out of the jar. You want them
7:08
with the stems on them. And all I did
7:11
was pull them out
7:14
and I dried them up a little bit and
7:16
then we're going to put them on the
7:16
cake.
7:20
One, so three, and then we're going to
7:22
go across for the four.
7:26
And then we're going to do something
7:27
else to it
7:31
before everybody digs in,
7:33
like Thomas.
7:38
All right, now let me show you what
7:39
we're going to do.
7:40
Now, on the lime,
7:42
what I'm doing is I'm slicing them.
7:44
These are the ones that we zested.
7:46
So, just take off the end.
7:50
And then, you want to get six slices off
7:52
of each lime.
7:56
We can work with that.
7:58
Now, what you want to do
8:00
is take your knife, go right into the
8:02
middle, and then just cut a slit all the
8:04
way to the end there.
8:08
What you want to do is just be able to
8:09
twist it like that. And then, we're
8:11
going to put it on top next to the
8:13
cherry.
8:16
There we go. So, just give it a twist,
8:18
and then just kind of roll it around
8:20
this cherry, pushing into the cake,
8:23
so it holds it.
8:25
Just like that.
8:28
What do y'all think? My cherry limeade
8:31
poke cake. Look at that layer down there
8:34
with all that Jell-O in it.
8:37
Let's cut a slice, so I can give it a
8:38
try for you.
8:40
I got the piece out. Look at that, you
8:42
guys.
8:45
Who wants a bite of that?
8:49
I get the first.
8:52
Mhm.
8:53
There we go.
8:57
Mhm.
8:58
Wow.
9:00
That's refreshing.
9:02
Now, what a cherry limeade does, it's
9:04
refreshing.
9:07
I get the lime in there, because we put
9:08
it in two different layers, on the top,
9:11
and then we put it in the cake layer,
9:12
and we got that cherry Jell-O on the
9:14
inside of that cake,
9:17
and a cherry on top.
9:20
Mhm. Mhm. Mhm.
9:27
Wow. That's delicious, you guys. It'll
9:29
serve 12
9:31
if you do it like this.
9:33
>> [laughter]
9:35
[snorts]
9:36
>> All right. Or, if you're going to serve
9:38
it up somewhere, you can chill it and
9:41
then when you get somewhere, you can put
9:43
the cherries and the limes on there and
9:44
then cut it if you want to do it like
9:45
that or serve it individual pieces and
9:48
then decorate it at that point, but
9:52
I needed to show y'all this right here.
9:54
All right, you guys, thumbs up on this
9:56
one. It was made easy with a box cake
9:58
mix and a few ingredients.

10:14
Thomas does.
