Quick Scalloped Potatoes & Ground Beef Casserole

So easy using a box of scalloped potatoes or au gratin (with cheese). Check out the soup that I add in,

Equipment

  • large skillet
  • cutting board & sharp knife
  • measuring spoons
  • 9 x 13 casserole dish
  • large mixing bowl
  • whisk

Ingredients

  • 1 (7.7oz) family size box scalloped potatoes or au gratin potatoes
  • plus ingredients lists on back of box potatoes
  • 1 lb ground beef
  • 1 medium yellow onion, chopped
  • 1 (10.5oz) can cream of potato soup
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 350 degrees. Spray 9 x 13 baking dish with non-stick cooking spray.
  • In large skillet brown ground beef & soften onion together. Drain excess grease out of skillet. Stir in can of cream of potato soup.
  • In bottom of prepared baking dish place the uncooked potatoes from box of scalloped potatoes and spread out evenly.
  • In a large mixing bowl mix sauce packet from box with the ingredients listed on box. (water, milk, and butter) NOTE: melt butter before adding to bowl.
  • Spread hamburger mixture over the potatoes in baking dish loosely. Pour sauce mixture over hamburger mixture in baking dish.
  • Cook uncovered in preheated oven for 25 minutes. Remove and sprinkle cheese on tip. Place back in oven and cook an additional 10-15 minutes until cheese has melted and potatoes are tender.

  • Catherine, your video showed you adding 2 cans of cream of potato soup, but your written recipe shows only 1. .

    I would love to make this. Can you clarify please and also clarify the cooking temperature as it is much different than what the box of potatoes says.

    • You can use 1 can of the cream of potato soup, I used 2 cans because I wanted a little more potato. I baked it at 350 and it took about 35 minutes, just check and make sure your potatoes are at the desired texture.
