Taco Macaroni & Cheese

The Perfect Easy One Pot 30 Minute Meal Making Homemade Mac & Cheese combined with your favorite taco seasonings.

Equipment

  • large pot or large skillet (5 quart)

Ingredients

  • 1 lb ground beef
  • 1-2 bell pepper, diced (any color combination
  • 1 medium onion, diced
  • 2 tsp minced garlic
  • 1 pkg taco seasoning or 3 TBS homemade taco seasoning
  • 12 oz uncooked large elbow pasta
  • 3 cups chicken broth
  • 1 (4oz) can diced green chilies
  • 1 (14oz) can diced tomatoes
  • NOTE: you can replace the cans of green chilies & tomatoes with 1-2 cans rotel tomatoes
  • 2 cups cheddar cheese, shredded
  • salt & pepper to taste (optional)

Instructions

  • In a large pot or skillet over medium high heat break up ground beef and cook until no longer pink. (Drain if needed.)
    Add in diced bell peppers and onion. Cook until peppers and onions are soft. Add in garlic and cook 30 seconds while stirring.
  • Stir in taco seasoning, green chilies, diced tomatoes and chicken broth. Season with salt & pepper if needed.
    Over high heat bring mixture to a boil. Stir in pasta.
  • Lower heat to a low setting, place lid on and cook for 12-15 minutes until pasta is cooked through and tender. NOTE: Stir twice during cooking time to make sure pasta isn't sticking to the bottom of pot and also you can check the liquid level.
    Add more broth or water if needed. (You don't want it too soupy.)
  • When pasta is done, remove lid and turn off burner. Stir in shredded cheese. Garnish with your favorite taco toppings if desired. Enjoy.
