Enchirito - Taco Bell CopyCat Recipe
An Enchirito is a cross between a burritto and an enchilada. Made with ground beef, tortillas, enchilada sauce, cheese, taco flavorings.

- 2 lbs ground beef
- 1 medium yellow onion, diced small
- 6 1/2 TBS homemade taco seasoning or 2 1/4 packets of store bought taco seasoning (DIVIDED)
- 1 (14oz) can refried beans
- 2 TBS sour cream
- 2 (10oz) cans red enchilada sauce
- 8-10 large burrito size flour tortillas
- 8 oz shredded cheddar cheese
- 1/4 cup water
- sour cream, sliced olives and/or cilantro, for garnish
In a large skillet break up and brown ground beef. Add in diced onion and cook until onion is softened and ground beef is cooked through. Drain any excess grease.
Stir in 6 TBS homemade taco seasoning or 2 packets of store bought taco seasoning along with 1/4 cup water. Simmer for 3 minutes. Turn off burner.
In medium sauce pan heat up refried beans, 2 TBS sour cream, and 1/2 TBS taco seasoning. Turn off heat.
For each enchirito, place one burrito size flour tortilla on a microwave plate. Cover with a wet paper towel. MIcrowave for 30 seconds.
Take paper towels off of tortilla. Place 2 TBS heated refried beans along middle of tortilla. Spoon 3-4 TBS of taco meat along the beans. Fold in sides of tortilla and start rolling tortilla from front end to back end. The seam side should be down.
Pour red enchilada sauce over enchirito. Top with a few TBS of shredded cheese to cover.
Microwave on a safe plate for 1 1/2 - 2 minutes until cheese has melted and enchirito is heated through.
Top with extra sour cream, sliced olives, and cilantro, if desired.
