In a large ziploc or storage gallon size bag place sugar, cinnamon, and salt. Zip bag closed and shake well to combine. Set aside.
In a large mixing bowl place egg white, water, and vanilla extract. Whisk until frothy. (Takes about 2-3 minutes.) Toss in pecans and coat them well.
Pour coated pecans into bag with the cinnamon, sugar, salt mixture. Seal bag and shake carefully until all pecans are coated evenly.
Spread coated pecans on to a parchment or silicone lined large sheet pan. (Try to evenly spread them in one layer.)
Bake in 250 degree preheated oven for 1 hour. Every 20 minutes, stir the pecans.
Remove from oven and allow to cool completely before storing in an airtight container.
