In large bowl mix together all meatloaf ingredients listed. Overlap 2 sheets of foil & spray lightly with cooking spray. Place meatloaf mixture into center of foil sheets and form into an 8"x4"x2" firmly. Roll up the edges of foil around the sides of the meatloaf to keep drippings inside. Place foiled meatloaf into basket of air fryer.
In medium bowl whisk together all ingredients for meatloaf topping. Using pastry brush coat top of meatloaf with the topping.
Rinse potatoes & dry them. Place in medium bowl. Coat potatoes with salt, black pepper, garlic powder, onion powder, dried parsley, and avocado oil. Place potatoes inside of air fryer basket on outside of foil meatloaf.NOTE: Keep potatoes bite size. Cut smaller if needed.
Cook in air fryer at 375 degrees for 30 minutes or until inside temperature of meatloaf is at least 165 degrees.
Let meatloaf sit in basket for 10-15 before removing. Place onto a cutting board, using a spatula, left up meatloaf & pull out foil from bottom of meatloaf. Slice meatloaf & serve along side potatoes and a side vegetable.NOTE: if potatoes need more time, place basket with potatoes back in air fryer for a few minutes until them become softened.
