Almond Joy Earthquake Cake

Love Almond Joy candy bars? How about coconut, chocolate and almonds? This one is for you. So delicious, moist and full of flavor. Easily made with a box cake mix.

Equipment

  • 3 medium bowls
  • electric hand mixer
  • 9 x 13 baking dish

Ingredients

  • 1 1/2 cups sweetened shredded coconut (DIVIDED)
  • 1 cup almonds, chopped
  • 1 (15.25oz) chocolate fudge box cake
  • plus ingredients listed on back of cake box (eggs, water, oil)
  • 1 (8oz) pkg cream cheese, softened
  • 1 cup butter, softened
  • 1/2 tsp almond extract
  • 2 cups powdered sugar
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray with flour in it.
  • Sprinkle 1/2 (3/4 cup) shredded sweetened coconut in bottom of prepared baking dish. Sprinkle 1 cup chopped almonds on top of the coconut. Set baking dish aside.
  • In a large bowl place box cake mix, plus the ingredients lists on back of package (eggs, water, oil).
    NOTE: for a fluffier bakery style cake, switch out milk for the water and melted butter for the oil.
    Pour batter evenly over the coconut and almonds in prepared baking dish evenly. Do not stir. Set aside.
  • In medium bowl cream together softened cream cheese, softened butter, and almond extract until creamy. Should take 2 minutes. Beat in powdered sugar 1 cup at a time until well combined.
    Fold in rest of (3/4 cup) sweetened shredded coconut into cream cheese mixture. Drop the mixture all over the prepared cake batter in baking dish by using a spoon.
    Using a knife, swirl the mixture through the cake batter up to 1" from baking dish edge. (This will prevent the cream cheese mixture from bubbling over the dish during baking.) Sprinkle chocolate chips all over the batter.
  • Bake in preheated oven for 45-55 minutes until toothpick inserted in cake portion comes out clean. (NOTE: do not insert toothpick into cream cheese mixture, only the chocolate cake portion near the center.)
  • Cool cake completely to room temperature before serving.
