Preheat oven to 350 degrees.
Using an electric mixer, cream together butter and sugar in a large bowl.
Add egg and mix well.
In medium bowl, mix together flour, baking soda, cinnamon, salt, and nutmeg.
Gradually add flour mixture to the butter-sugar mixture until combined well.
Mix in chopped apples and the apple cider until combined.
Place on parchment lined baking pans using a 1 inch cookie scoop.
Bake for 15-18 minutes. They will turn a beautiful light brown color.
Mix the three ingredients for the icing. Add more cider if needed. Drizzle over cooled cookies.
