Apple Cider Cookies

Ingredients

  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 1/3 cup brown sugar packed
  • 3/4 cup unsalted butter room temperature
  • 1 egg
  • 1 apple diced small
  • 1/4 cup apple cider

Icing

  • 2 TBS butter melted
  • 3 cups powdered sugar
  • 8-10 TBS apple cider

Instructions

  • Preheat oven to 350 degrees.
  • Using an electric mixer, cream together butter and sugar in a large bowl.
  • Add egg and mix well.
  • In medium bowl, mix together flour, baking soda, cinnamon, salt, and nutmeg.
  • Gradually add flour mixture to the butter-sugar mixture until combined well.
  • Mix in chopped apples and the apple cider until combined.
  • Place on parchment lined baking pans using a 1 inch cookie scoop.
  • Bake for 15-18 minutes. They will turn a beautiful light brown color.
  • Mix the three ingredients for the icing. Add more cider if needed. Drizzle over cooled cookies.
  • Enjoy.
