Bacon & Eggs Grilled Cheese Sandwich
Turn a grilled cheese into a fun breakfast idea by adding bacon & eggs.

Equipment
- large skillets or large griddle
Ingredients
- 4 slices bacon
- 1/4 stick butter
- 4 large eggs
- salt & pepper, to taste
- 4 slices white bread
- 4 slices american cheese
- tomato slices (optional)
Instructions
- Heat large griddle or skillet to a medium heat. Place bacon on in a single layer and cook until browned and crispy. (Turning several times during process.) Remove crisp bacon to a paper towel lined plate to drain. Set aside.
- Drain grease off of griddle or skillet. Spread 1 TBS butter over entire surface of griddle or skillet and heat to a medium heat.
- Add eggs to hot skillet and season with salt & pepper. Cook eggs to your specific liking (well done, over easy, over medium, etc.). Remove cooked eggs from skillet or griddle and place on a plate and set aside.
- Spread more butter over surface of griddle or large skillet and heat over medium heat. Place bread in a single layer on top of melted butter and allow bread to toast to a light brown. Butter underneath bread and flip to toast other side of bread.
- Place piece of cheese on each toasted bread. Place eggs and bacon on one pieces of toast with cheese. Place other piece of toast with cheese onto bacon & eggs to create a grilled cheese sandwich. Turn off heat.
- Add extras to inside of sandwich, if desired, like tomatoes, avocados, spinach. Enjoy.
