Bacon Wrapped Asparagus

Ingredients

  • bacon slices
  • fresh asparagus
  • brown sugar
  • cracked black pepper

Instructions

Prepare Asparagus (Have in mind how many you want, these will determine how many to prepare.)

  • Hold both ends of each fresh asparagus and bend to the point where it snaps. Throw away the hard tough bottom end of the asparagus. Keep the tip & middle portion of the asparagus. Rinse asparagus under water.
  • Place asparagus in a large pot of salted water and cook (blanch) for 2 minutes. Remove asparagus to a colander and run cold water over the asparagus to stop the cooking process and to cool down the asparagus. Pat dry with paper towels.

Preparing the bacon wrapped asparagus.

  • Lay out a piece of uncooked bacon on your work surface. Place the big end of a prepared asparagus on one end of bacon. Roll the bacon around the asparagus all the way to the tip.
    NOTE: if you have thin asparagus you can wrap more than one with the bacon.
  • Place the wrapped asparagus onto a sheet pan that has a lip edging around the pan to keep the bacon grease from rolling off of pan. Prepare the rest of your bacon wrapped asparagus.
  • Sprinkle brown sugar on the tops of the bacon wrapped asparagus. Crack black pepper on top of the brown sugar.
  • Place in pan in preheated 400 degree oven for 20-30 minutes. It will depend on how crisp you want your bacon. Keep an eye on it.
