Banana Fritters

A light & fluffy Banana Fritter. Bananas coated in a sweet batter lightly fried and drizzled with a glaze. These are delicious.

Equipment

  • 2 medium mixing bowl
  • 1 large mixing bowl
  • cutting board
  • large deep skillet or Dutch Oven Pot
  • foil lined sheet pan with cooling rack

Ingredients

  • 2 large eggs, room temperature
  • 2/3 cup milk
  • 1 TBS butter, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 TBS brown sugar
  • 2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 4 sm-med bananas diced
  • vegetable oil for frying

Glaze

  • 2 cups powdered sugar
  • 1/3 cup milk
  • 1/2 tsp vanilla extract

Instructions

  • In a small bowl whisk eggs, milk, melted butter, and vanilla. Set aside.
  • In a large bowl whisk together flour, brown sugar, baking powder, salt & cinnamon. Pour in wet ingredients and mix together. Fold in chopped banana until all coated.
  • Heat 2-inches of oil in a large pot/dutch oven or large deep skillet to a medium high heat (350 degrees). Scoop fritter mixture using a 1 inch scoop and carefully drop mixture into hot oil (usually 5-6 fritters will fit into oil).
  • Cook for 3-4 minutes turning them around several times until golden brown and fully cooked through. Remove from oil and place on the cooling rack in the foil lined sheet pan to drain and cool. Repeat until all fritter batter is done.
  • Glaze: In a medium bowl whisk together powdered sugar, milk, and vanilla until smooth. Dunk the cooled fritters into glaze and place back onto cooling rack. Enjoy.
