Banana Nut Muffins

Equipment

  • standard 12 cup muffin tin
  • paper muffin cups
  • large bowl
  • small bowl

Ingredients

  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1/2 cup butter, melted (1 stick)
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1/4 cup sour cream
  • 4 medium bananas, browned, mashed
  • 1/2 cup walnuts, chopped

Instructions

  • Line a standard 12 cup muffin tin with paper muffin cups.
  • In a medium bowl whisk or sift together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  • In a large bowl whisk together both sugars. Whisk in melted butter, eggs, vanilla extract, and sour cream. Mash bananas in separate small bowl and stir into mixture.
  • Fold in flour mixture slowly until combined. Fold in walnuts.
  • Spoon batter into the paper muffin cups in the muffin tin. (I find that 1/3 measuring cup fills the muffin tin evenly.)
  • Place in preheated 400 degree oven for 5 minutes. Lower heat to 375 and bake an additional 12 minutes or until golden brown and toothpick inserted into center of muffin comes out clean.
