Banana Nut Muffins
Easy Moist & Delicious Banana Bread Nut Muffins made from simple ingredients and bananas.

Ingredients
- 2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup brown sugar, packed
- 1/2 cup white granulated sugar
- 1/2 cup butter, melted (1 stick)
- 2 large eggs
- 2 tsp vanilla extract
- 1/4 cup sour cream
- 4 medium bananas, browned, mashed
- 1/2 cup walnuts, chopped
Instructions
- Line a standard 12 cup muffin tin with paper muffin cups.
- In a medium bowl whisk or sift together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
- In a large bowl whisk together both sugars. Whisk in melted butter, eggs, vanilla extract, and sour cream. Mash bananas in separate small bowl and stir into mixture.
- Fold in flour mixture slowly until combined. Fold in walnuts.
- Spoon batter into the paper muffin cups in the muffin tin. (I find that 1/3 measuring cup fills the muffin tin evenly.)
- Place in preheated 400 degree oven for 5 minutes. Lower heat to 375 and bake an additional 12 minutes or until golden brown and toothpick inserted into center of muffin comes out clean.
