Beef and Cheese Manicotti

As far as I can remember I loved Italian food and the many ways they can be made.  Here’s my way of making beef and cheese manicotti.  My family loved this dish.  Check it out, and maybe you will be updating your grocery list one day.

Beef and Cheese Manicotti

Ingredients

  • 10-14 manicotti tubes
  • 3-4 cups marinara sauce
  • 1 lb ground beef
  • 1 sm onion minced
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp dried parsley
  • 16 oz cottage cheese
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated parmesan
  • fresh basil for garnish

Instructions

  • Cook box of manicotti per instructions on box. Set aside.
  • Preheat oven to 350 degrees. Lightly grease a 13x9 baking dish.
  • Spread 1 1/2 cups of marinara sauce onto bottom of dish. Set aside.
  • In a skillet on medium high heat, put 1 TBS olive oil and 1 TBS butter and heat up. Add minced onion and saute for 1-2 minutes.
  • Add ground beef to onions and cook until meat is browned. Add seasonings and stir for 1 minutes. Turn heat off. Drain fat from meat by placing meat on a paper towel cover plate to allow meat to cool.
  • In large bowl mix cottage cheese, 2 cups of mozzarella cheese and parmesan cheese. Once mixed completely, add beef and mix. Taste, and add salt & pepper if needed.
  • Transfer mixture into a Ziploc bag or a piping bag, cutting the corner of bottom of bag to allow mixture to come out.
  • Pipe filling into manicotti and place onto baking dish.
  • Place remaining marinara sauce and remaining mozzarella cheese onto shells.
  • Bake for 25-30 minutes until cheese is gold brown and bubbly.
  • Garnish with fresh basil.
