Blooming Quesadilla Ring Appetizer

Equipment

  • large sheet pan
  • medium skillet
  • cutting board & sharp knife
  • medium mixing bowl
  • spoon
  • small bowl

Ingredients

  • 2 cups cooked chicken breasts, chopped finely
  • 1/4 red bell pepper, diced finely
  • 1/2 jalapeno, diced finely
  • 1/4 red onion, diced finely
  • 1 TBS cooking oil
  • 2 cups taco sauce (ex. pace picante) DIVIDED
  • 2 cups shredded mexican blend cheese DIVIDED
  • 10 regular size flour tortillas, cut into 1/2 (20 semi circles)
  • fresh chopped cilantro Garnish

Instructions

  • Preheat oven to 375 degrees. Fit parchment paper on a large sheet pan. Place a small bowl in center of pan. Set aside.
  • Add cooking oil in a medium skillet over medium heat. Stir in red pepper, jalapeno, & red onion and cook until softened. (2 minutes)
  • Place chopped cooked chicken, cooked vegetables (red bell pepper, jalapeno, & red onion), and 1 cup taco sauce into a medium bowl and mix well.
  • Cut tortillas in half creating 20 semi circles. Place a half tortilla on work surface and spread 1-2 TBS of chicken mixture in center of tortilla. Sprinkle with 1 TBS of shredded cheese.
  • Roll tortilla from tip to tip creating a cone shape. Place onto prepared sheet pan between the small bowl and edges of sheet pan. Make 9 more filled cone shaped tortillas and place around bowl.
  • Sprinkle 1/2 cup of shredded cheese all over the 10 cone shaped filled tortillas.
  • Create the rest of the 10 filled cone shaped tortillas and place on top of the 1st layer in between. Sprinkle remaining cheese all over the 2nd layer.
    NOTE: You can create some of these with only cheese instead of all meat mixture.
  • Remove center bowl. Place pan in preheated oven for 10-15 minutes until cheese has melted and tortillas are slightly browned and crispy.
  • Remove from oven. Place bowl back into center of pan and fill with remaining taco sauce. Sprinkle chopped cilantro all over the quesadillas and taco sauce. Enjoy
