Broccoli Cheddar Soup

Ingredients

  • 2 heads broccoli chopped
  • 4 TBS butter
  • 1/2 onion diced
  • 1/4 cup flour
  • 2 cups heavy cream or half & half
  • 2 cups chicken stock
  • 1/2 cup carrots shredded
  • 2 tsp salt
  • 1 tsp pepper
  • 1/4 tsp cumin ground
  • 1/4 tsp paprika
  • 2 cups cheddar cheese grated

Instructions

  • In a large pot over medium heat melt butter. Add onion & carrot. Saute for 2 minutes until softened. Add flour & stir for 3 minutes.
  • Stir in chicken broth, heavy cream, and seasonings, bring to a simmer. Add broccoli. Simmer for 10-15 minutes (until desired texture of broccoli is met) stirring continually.
  • Turn off heat. Add in cheese and stir until just melted. Taste and adjust seasonings if needed.
  • Serve & Enjoy.
