Broccoli Cheddar Soup
Ingredients
- 2 heads broccoli chopped
- 4 TBS butter
- 1/2 onion diced
- 1/4 cup flour
- 2 cups heavy cream or half & half
- 2 cups chicken stock
- 1/2 cup carrots shredded
- 2 tsp salt
- 1 tsp pepper
- 1/4 tsp cumin ground
- 1/4 tsp paprika
- 2 cups cheddar cheese grated
Instructions
- In a large pot over medium heat melt butter. Add onion & carrot. Saute for 2 minutes until softened. Add flour & stir for 3 minutes.
- Stir in chicken broth, heavy cream, and seasonings, bring to a simmer. Add broccoli. Simmer for 10-15 minutes (until desired texture of broccoli is met) stirring continually.
- Turn off heat. Add in cheese and stir until just melted. Taste and adjust seasonings if needed.
- Serve & Enjoy.
