I’ve always made cake mix cookies, but this was a first for brownie mix cookies using a box of brownie mix. Oh my gosh, I’m telling you what, these were so amazing. It absolutely had the brownie consistency. I’ll definitely try to make more different variations.
Brownie Mix Cookies - Funfetti
Ingredients
- 1 (18) oz box funfetti brownie mix
- 1/2 cup all purpose flour
- 2 eggs
- 5 TBS melted butter
- 1 TBS water
Instructions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper.
- In a large mixing bowl, using an electric mixer or stand mixer, mix together dry brownie mix, eggs, butter and water.
- Using a 1 inch cookie scoop, place dough balls onto baking sheet abour 2 inches apart.
- Place a small piece of parchment paper over a dough ball and flatten to about 1/4 inch. Do this for all dough balls.
- Take the funfetti pieces and divide amongst each dough disk and press in.
- Bake for 8-10 minutes. The cookies should have a fine thin film on the top of cookie and have cracks through out.
- Let cookies cool on pan for 1 minute. Remove from pan and place on wire rack to cool completely.
