Busy Day Soup

A Vegetable Hamburger Soup with a Secret Easy Ingredient to keep you from chopping.

Equipment

  • large soup pot or Dutch oven with lid
  • wooden spoon
  • measuring spoons & cups

Ingredients

  • 1 lb ground beef
  • 1 pkt lipton onion soup mix
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 (14oz) can diced tomatoes with juice
  • 1 (14oz) can peas & carrots, drained
  • 1 (14oz) can corn, drained
  • 1 (14oz) can green beans, drained
  • 6-8 cups broth (one or combine flavors (beef broth, vegetable broth or chicken broth)
  • 8 oz uncooked pasta

Instructions

  • Break up and brown ground beef in a large soup pot or Dutch oven over medium high heat. Drain out excess grease.
  • Mix in lipton onion soup mix, garlic power, onion powder, and black pepper.
  • Stir in diced tomatoes, broth, and canned vegetables. Stir over high heat until it comes to a boil.
    NOTE: add extra broth for a soupy soup if needed during next cooking step.
  • Stir in uncooked pasta of choice and lower heat to a medium and allow to simmer until pasta is cooked tender. (Check time on back of package for estimated cook time. Usually anywhere from 8-11 minutes.)
