In a medium bowl, mix together cake mix, eggs and butter. Refrigerate for 30-45 minutes to solidify the dough.
Preheat oven to 350 degrees and prepare baking sheets with parchment paper, silpat nonstick baking mat, or lightly grease.
Using a 1 inch cookie scoop or TBS place dough onto baking sheets 2 inches apart.
Bake for 7-9 minutes. Cookies should be solid on the sides and soft on top.
Once cookies come out of oven, push the mint pieces into cookie while hot.
Remove cookies from pan and place on wire rack to completely cool. Enjoy.
