Cake Mix Cookie - Chocolate Mint

Ingredients

  • 1 (15.25) oz box chocolate cake mix I used devil's food flavor
  • 2 eggs bring to room temperature
  • 1/2 cup butter, melted
  • 30 pieces Andes Chocolate Mints broken into pieces

Instructions

  • In a medium bowl, mix together cake mix, eggs and butter. Refrigerate for 30-45 minutes to solidify the dough.
  • Preheat oven to 350 degrees and prepare baking sheets with parchment paper, silpat nonstick baking mat, or lightly grease.
  • Using a 1 inch cookie scoop or TBS place dough onto baking sheets 2 inches apart.
  • Bake for 7-9 minutes. Cookies should be solid on the sides and soft on top.
  • Once cookies come out of oven, push the mint pieces into cookie while hot.
  • Remove cookies from pan and place on wire rack to completely cool. Enjoy.
