Preheat oven to 350 degrees. Line a baking sheet with parchment or lightly spray with cooking spray.
Mix all ingredients in a large bowl.
Scoop dough onto baking sheets using either a 1 inch or 2 inch scoop.
Bake for 12-15 minutes. Cool
In a large bowl using an electric mixer, beat butter and sifted powdered sugar together.
Add marshmallow cream and mix well with the electric mixer. Add vanilla and give a final mix.
Place about 1 TBS of creme on the back side of 1 cookie. Place the back side of another cookie onto crème to complete the sandwich style cookie.
