Cheese Stuffed Sausage

- 2 (14-16oz) packages of linked smoked sausage (or other flavored sausage)
- 1 cup diced bell pepper, (red, orange, or green)
- 1/4 red onion, diced
- 8 oz block cream cheese, softened
- 8 oz shredded cheddar cheese
- 1/4 tsp each black pepper, garlic powder, onion powder, ground cumin, and paprika
- dried parsley, garnish
Cut link sausage into 4 inch pieces. slit each pieces lengthwise 3/4 of the way through. Place on a parchment lined sheet pan.
In a large mixing bowl blend together bell peppers, onion, cream cheese, 1/2 of the shredded cheddar cheese, and all seasonings, except parsley.
Spoon mixture on top of the split sausages.
Bake in a 400 degree preheated oven for 10 minutes or so until cheese has melted and sausage is cooked through.
Top with parsley and allow to cool a few minutes before enjoying.
