Cheesy Sloppy Joe & Pasta Casserole
A perfect One Skillet Meal with ground beef, pasta, delicious flavors that mimic sloppy joes, and cheese. My family enjoys this one a lot.

- large deep skillet
Ingredients
- 1 lb ground beef
- 1 medium onion, diced
- 1 medium green bell pepper, diced
- 1 TBS cooking oil or butter
- 1 tsp minced garlic
- 1/2 cup ketchup
- 1/2 cup water
- 1 TBS brown sugar
- 1 tsp mustard
- 1 (14.5oz) can diced tomatoes
- 3 cups chicken broth
- 12 oz farfalle pasta, uncooked (or other favorite pasta)
- 1 cup corn
- 8 oz velvetta cheese, cubed
- 1 1/2 cups cheddar cheese, shredded
- parsley, for garnish
Instructions
- In a large skillet, brown ground beef until no longer pink over medium high heat. Drain grease. Add in 1 TBS cooking oil, onions and peppers. Season with a pinch of salt & pepper. Saute until onions are softened and translucent. Add in garlic and stir for 1 minute.
- Stir in water, ketchup, brown sugar, and mustard. Stir in chicken broth and bring to a boil over high heat. Stir in corn, tomatoes, and pasta. Place a lid on skillet and lower heat to a medium high. Cook for 8-9 minutes until pasta is al dente.
- Remove lid and stir in Velvetta cheese. Turn off heat. Sprinkle top of casserole with shredded cheddar cheese, place lid back on to allow cheese to melt. Sprinkle with parsley and enjoy.
