Chicken Divan Casserole

Equipment

Ingredients

  • 2 cups fully cooked rotisserie chicken breasts cut int bite size pieces
  • 1 (12 oz) bag frozen broccoli florets, thawed (or fresh broccoli, blanched)
  • 1/2 cup mayonnaise
  • 1 (10.5 oz) cream of chicken soup
  • 1/2 TBS lemon juice
  • 1 TBS dijon mustard
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup + 2 TBS shredded parmesan cheese (DIVIDED)
  • 1/4 tsp salt
  • 3/4 tsp black pepper (DIVIDED)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1/4 cup panko or bread crumbs
  • serve over cooked chicken flavored pasta, rice, or mashed potatoes

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
  • Place thawed broccoli in bottom of prepared baking dish evenly.
    NOTE: if using fresh broccoli, steam in a pot of water for 2-3 minutes to par cook.
  • Place the chopped cooked chicken evenly over the broccoli in baking dish.
    NOTE: you can use any type of chicken as long as it is cooked. (Bake, boil, crockpot, or instant pot.
  • In a large mixing bowl mix together mayonnaise, cream of chicken soup, lemon juice, mustard, 1/4 cup shredded parmesan cheese, 1/2 cup cheddar cheese, salt, pepper, garlic powder, onion powder, and paprika.
  • Dollop mixture on top of the chicken in prepared dish and spread evenly.
    NOTE: DO NOT MIX THE CHOPPED CHICKEN, BROCCOLI, into the MIXTURE.
  • In a small bowl mix together panko or bread crumbs, 2 TBS parmesan cheese, and 1/8 tsp cracked black pepper. Sprinkle this mix all over the mixture in baking dish.
  • Sprinkle smoked paprika on top of the bread crumb topping.
  • Bake in preheated oven for 25-30 minutes. Served best with cooked pasta, rice, or mashed potatoes.
    NOTE: I like to add flavor to the pasta or rice while it's cooking by adding in some chicken bullion.
