Chicken & Gravy Casserole
A delicious 3 layer casserole easily put together with your favorite mash potato recipe (or store bought), cooked chicken (I use rotisserie) and a delicious easy gravy to top it off.
Equipment
- large pot
- 9 x 13 baking dish
- medium bowl
Ingredients
Mashed Potatoes Layer
- 8-10 medium russet potatoes, peeled and diced small
- 1/2 TBS salt
- water to fill pot
- 1/2 cup shredded cheese
- 1/2 cup milk
- 3 TBS butter
- 1/4 tsp salt
- 1/4 tsp black pepper
Chicken Layer
- 2-3 cups shredded or diced cooked chicken
Gravy Layer
- 1 (10.5oz) can cream of chicken soup
- 1 cup chicken broth
- 1 cup milk
- 1 (0.87) oz package chicken gravy seasoning mix
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt, to taste
Garnish
- fresh parsley (opt)
Instructions
Mashed Potatoes
- Place peeled and diced potatoes in a large pot. Fill with water 1 inch above the potatoes. Add 1/2 TBS salt to potatoes and water. Turn burner to a high heat and bring to a boil. Lower heat to a medium and let simmer 15 minutes or until potatoes are fork tender. Drain potatoes and place back in pot. Add in 1/2 cup cheese, 1/2 cup milk, 3 TBS butter, salt & pepper. Using a potato masher blend ingredients until smooth.
Gravy
- In a medium bowl whisk together, cream of soup, broth, gravy mix, black pepper, garlic powder, and onion powder until combined. NOTE: taste to see if salt is needed.
Build Casserole
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Spread the mashed potatoes evenly in prepared baking dish. Sprinkle shredded/diced cooked chicken over the mashed potatoes. Pour the gravy over the cooked chicken evenly.
- Cover baking dish with foil and bake in oven for 30-35 minutes until casserole is heated through. Gravy should still be loose, after all it is gravy. Top with parsley. Let sit for 5-7 minutes and enjoy.
