Chicken & Gravy Casserole

A delicious 3 layer casserole easily put together with your favorite mash potato recipe (or store bought), cooked chicken (I use rotisserie) and a delicious easy gravy to top it off.

Equipment

  • large pot
  • 9 x 13 baking dish
  • medium bowl

Ingredients

Mashed Potatoes Layer

  • 8-10 medium russet potatoes, peeled and diced small
  • 1/2 TBS salt
  • water to fill pot
  • 1/2 cup shredded cheese
  • 1/2 cup milk
  • 3 TBS butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Chicken Layer

  • 2-3 cups shredded or diced cooked chicken

Gravy Layer

  • 1 (10.5oz) can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 (0.87) oz package chicken gravy seasoning mix
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • salt, to taste

Garnish

  • fresh parsley (opt)

Instructions

Mashed Potatoes

  • Place peeled and diced potatoes in a large pot. Fill with water 1 inch above the potatoes. Add 1/2 TBS salt to potatoes and water. Turn burner to a high heat and bring to a boil. Lower heat to a medium and let simmer 15 minutes or until potatoes are fork tender.
    Drain potatoes and place back in pot. Add in 1/2 cup cheese, 1/2 cup milk, 3 TBS butter, salt & pepper. Using a potato masher blend ingredients until smooth.

Gravy

  • In a medium bowl whisk together, cream of soup, broth, gravy mix, black pepper, garlic powder, and onion powder until combined. NOTE: taste to see if salt is needed.

Build Casserole

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Spread the mashed potatoes evenly in prepared baking dish. Sprinkle shredded/diced cooked chicken over the mashed potatoes. Pour the gravy over the cooked chicken evenly.
  • Cover baking dish with foil and bake in oven for 30-35 minutes until casserole is heated through. Gravy should still be loose, after all it is gravy. Top with parsley. Let sit for 5-7 minutes and enjoy.
