Chicken Laredo

Ingredients

  • 4 Chicken Breast
  • 2 poblanos prepared (roasted and sliced)
  • 3 Roma Tomatoes chopped
  • 1 Avocado chopped
  • 1/2 Red Onion sliced
  • 2 TBS Cilantro chopped
  • Feta Cheese Crumbles
  • olive oil
  • Salt, Pepper, Garlic Powder

Instructions

  • Preheat oven to 350 degrees.
  • Season chicken breasts with salt, pepper, and garlic powder.
  • Place in oven proof pan and place in oven for 16 minutes.
  • Meanwhile, preheat frying pan and add drizzle of olive oil. Cook onions until caramelized. Remove from heat.
  • Pull chicken out of oven, flip chicken breasts over. Put your roasted poblanos, red onions, and tomatoes on each chicken breast. Return to oven for additional 12-14 minutes or until chicken is no longer pink.
  • Remove from oven, and garnish with avocado, cilantro, and feta cheese.
  • Serve & Enjoy!
