Chicken Meatballs with Alfredo Sauce

Ingredients

Meatballs

  • 1 lb ground chicken
  • 1/2 cup ricotta cheese
  • 1/4 cup shredded parmesan cheese
  • 1/2 cup bread crumbs or panko
  • 2 tsp minced garlic
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 TBS italian seasoning

Spinach Alfredo Sauce

  • 4 TBS butter
  • 2 tsp minced garlic
  • 2 cups heavy cream
  • 1 cup grated parmesan cheese
  • 6 oz fresh spinach thinly sliced
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

Serve with

  • cooked rice, pasta, potatoes, or serve as an appetizer

Instructions

Prepare Meatballs

  • Preheat oven to 400 degrees. Line a deep sheet pan with parchment paper.
  • In a large bowl mix together ground chicken, ricotta, 1/4 cup parmesan, bread crumbs, 2 tsp minced garlic, salt, black pepper, and italian seasoning.
  • Scoop mixture using a 1 1/2 inch cookie scoop and roll into a solid ball. Place on prepared baking sheet with 1/4 inch space between each chicken ball.
  • Bake in preheated oven for 20-25 minutes. Turn meatballs 1/2 way through cooking time to get golden brown on the sides of meatballs. Check one meatball for doneness after the 20 minutes.

Prepare Sauce

  • In a medium sauce pan melt 4 TBS butter over medium heat. Stir in garlic and cook for 1 minute. Slowly add in heavy cream while stirring.
  • Stir in 1 cup parmesan cheese. Simmer and stir for 5 minutes until it thickens slightly. Add in thin strips of parsley. Season with salt & pepper to your taste.
  • Best to serve meatballs over cooked chicken flavored rice, pasta, or mashed potatoes. Pour sauce over the meatballs.
    Also, the meatballs and sauce could be served as an appetizer.
