Chicken Parmesan Meatloaf Recipe

Ingredients

  • 1 lb ground chicken
  • 1 egg, lightly beaten
  • 1/2 cup bread crumbs or panko crumbs
  • 3 TBS minced onion
  • 1/2 cup grated parmesan
  • 1/2 cup pasta sauce
  • 4 slices mozarella cheese, or 1/2 cup shredded
  • 1/4 cup milk
  • 2 tsp italian seasoning
  • 1/4 tsp garlic powder
  • salt & pepper, to taste
  • 2 TBS dried parsley
  • fresh parsley, for garnish, if needed

Instructions

  • Preheat oven to 350 degrees. Lightly grease a meatloaf pan or sheet pan. (I usually put parchment paper on the sheet pan to free form the meatloaf.)
  • In large bowl, place ground chicken, egg, bread crumbs, onion, parmesan cheese, milk, and all seasonings. Mix until well combined. (Don't over mix)
  • Place mixture into pan and shape into a loaf.
  • Pour pasta sauce over meatloaf.
  • Bake for 50 minutes or until internal temperature of 165 degrees is reached.
  • Take out of oven and place mozzarella cheese on top of the sauce. Place back in oven for 5 minutes or until cheese has melted.
  • Sprinkle with fresh parsley, if desired. Enjoy.
