All the delicious flavors of Chicken Parmesan in the form of a meatloaf using ground chicken.
Chicken Parmesan Meatloaf Recipe
Ingredients
- 1 lb ground chicken
- 1 egg, lightly beaten
- 1/2 cup bread crumbs or panko crumbs
- 3 TBS minced onion
- 1/2 cup grated parmesan
- 1/2 cup pasta sauce
- 4 slices mozarella cheese, or 1/2 cup shredded
- 1/4 cup milk
- 2 tsp italian seasoning
- 1/4 tsp garlic powder
- salt & pepper, to taste
- 2 TBS dried parsley
- fresh parsley, for garnish, if needed
Instructions
- Preheat oven to 350 degrees. Lightly grease a meatloaf pan or sheet pan. (I usually put parchment paper on the sheet pan to free form the meatloaf.)
- In large bowl, place ground chicken, egg, bread crumbs, onion, parmesan cheese, milk, and all seasonings. Mix until well combined. (Don't over mix)
- Place mixture into pan and shape into a loaf.
- Pour pasta sauce over meatloaf.
- Bake for 50 minutes or until internal temperature of 165 degrees is reached.
- Take out of oven and place mozzarella cheese on top of the sauce. Place back in oven for 5 minutes or until cheese has melted.
- Sprinkle with fresh parsley, if desired. Enjoy.
