Chicken & Stuffing Casserole

Ingredients

  • 3 cups cooked chicken (I baked chicken for this recipe.) You can also use rotisserie chicken or canned chicken. As long as it's cooked chicken)
  • 1/2 onion, minced (I used same box shredded as carrot)
  • 1 carrots, minced (I used a box shredder to mince carrot)
  • 1 (10.5oz) can cream of chicken soup
  • 1 cup sour crem
  • 1 cup milk
  • 1 stick (1/2 cup) butter melted
  • 1/2 cup Chicken Broth
  • 2-4 cups dry stuffing mix (I used cornbread stuffing from StoveTop)
  • 8 oz Shredded Cheese (I used cheddar cheese)
  • salt & pepper to taste
  • 1 tsp Garlic Powder

Instructions

  • Preheat oven to 350 degrees.
  • Spray a 9 x 13 baking dish with cooking spray.
  • In a medium mixing bowl, combine carrot, onion, sour cream, cream of chicken soup, butter, milk, broth, salt, pepper, and garlic powder.
  • Add dry stuffing and combine.
  • Pour mixture into prepared baking dish.
  • Layer cooked chicken on top of mixture.
  • Cover with the shredded cheese.
  • Bake uncovered for 30 -40 minutes until cheese is melted and nice and golden. Enjoy.
