Chili Hot Dog Tater Tot Casserole

Equipment

Ingredients

  • 8 hot dogs cut into 1/2 inch slices
  • 2 (15 oz) cans chili (or try my homemade chili recipe below)
  • 1/2 medium yellow onion, diced
  • 1 1/2 cups cheddar cheese, shredded
  • 1 (32oz) bag frozen tater tots
  • sliced green onions, for garnish

My Homemade Beanless Chili (make this instead of using canned chili, if desired)

  • 1 lb ground beef
  • 1/2 yellow onion, diced
  • 1 rib celery, diced small
  • 2 tsp garlic, minced
  • 1 TBS white granulated sugar
  • 1 TBS yellow mustard
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 oz tomato paste or tomato soup
  • 14 oz fire roasted diced tomato
  • 1/2 cup water

Instructions

To make homemade hot dog chili (if not using canned chili from store)

  • In large skillet over medium high heat, bring 2 TBS cooking oil to a sizzle. Add in onion & celery. Cook for 3-4 minutes until lightly browned & softened. Add in garlic and stir for 30 seconds. Add in ground beef. Break it up and brown. Smash the ground beef while cooking to thin out. Drain excess grease after browned.
    Stir in sugar, mustard, chili powder, cumin, Worcestershire sauce, salt, pepper, tomato paste, diced tomatoes, and water. Simmer for 20 minutes on low heat. Cool to thicken.

To make casserole

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Pour cans of chili (or homemade version of chili into bottom of prepared baking dish.
  • Place cut up hot dogs on top of chili & stir to coat. Spread evenly.
  • Top with diced onion. Sprinkle with 4 oz of shredded cheddar cheese.
  • Top with frozen tater tots in 1 layer.
  • Bake for 30 minutes. Sprinkle with remainder cheese on top and bake another 10-15 minutes until tots are crispy on top and casserole heated through. Let sit 10 minutes before serving. Garnish with green onions, if desired.
