2(15 oz)cans chili (or try my homemade chili recipe below)
1/2mediumyellow onion, diced

1(32oz)bag frozen tater tots
sliced green onions, for garnish
My Homemade Beanless Chili (make this instead of using canned chili, if desired)
1lbground beef
1/2yellowonion, diced
1ribcelery, diced small
2tspgarlic, minced
1TBSwhite granulated sugar
1TBSyellow mustard
2tspchili powder
1tspground cumin
1tspWorcestershire sauce
1tspsalt
1/2tspblack pepper
4oztomato paste or tomato soup
14ozfire roasted diced tomato
1/2cupwater
Instructions
To make homemade hot dog chili (if not using canned chili from store)
In large skillet over medium high heat, bring 2 TBS cooking oil to a sizzle. Add in onion & celery. Cook for 3-4 minutes until lightly browned & softened. Add in garlic and stir for 30 seconds. Add in ground beef. Break it up and brown. Smash the ground beef while cooking to thin out. Drain excess grease after browned.Stir in sugar, mustard, chili powder, cumin, Worcestershire sauce, salt, pepper, tomato paste, diced tomatoes, and water. Simmer for 20 minutes on low heat. Cool to thicken.
To make casserole
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray. Pour cans of chili (or homemade version of chili into bottom of prepared baking dish.
Place cut up hot dogs on top of chili & stir to coat. Spread evenly.
Top with diced onion. Sprinkle with 4 oz of shredded cheddar cheese.
Top with frozen tater tots in 1 layer.
Bake for 30 minutes. Sprinkle with remainder cheese on top and bake another 10-15 minutes until tots are crispy on top and casserole heated through. Let sit 10 minutes before serving. Garnish with green onions, if desired.
Do the tots stay crispy
Not crispy like just out of the oven, but not mushy either.
