

Chinese Chicken Chow Mein
Asian Cuisine with soft chewy flavorful noodles, thinly sliced chicken in a delicious savory but sweet sauce and soft vegetables.
Equipment
- 2 cutting boards (1 for chicken & 1 for veggies)
- sharp knives
- large wok or large deep skillet
- small bowl for sauce
- small bowl for chicken
- measuring spoons & cups
- large pot for boiling water & strainer
Ingredients
Chicken Chow Mein
- 1 lb boneless, skinless chicken breasts, thinly sliced
- 1 TBS soy sauce
- 1 TBS corn starch
- 8 oz chow mein noodles (or other thin pasta)
- 2 TBS cooking oil
Vegetables
- 1/4 green cabbage, thinly sliced
- 1 cup carrots, cut into matchsticks or shredded
- 1 cup bean sprouts
- 3 green onions, cut into big pieces
- 1 yellow onion, cut into big pieces
- 2 tsp minced garlic
Sauce
- 1/4 cup soy sauce
- 3 TBS hoisin sauce
- 1 TBS sesame oil
- 1 TBS corn starch
- 1-2 tsp honey or sugar
- 1/4 cup chicken broth
- 1/4 tsp black pepper
Instructions
- To marinade chicken, place thinly sliced chicken breast into small bowl. Add in 1 TBS soy sauce and 1 TBS corn starch. Mix well to coat the chicken. Set aside for 10 minutes.
- In the meantime, in another small bowl whisk together sauce ingredients (soy sauce, hoisin sauce, sesame oil, 1 TBS corn starch, honey, chicken broth, black pepper). Set aside.
- Cook chow mein noodles in a large pot of boiling water for 3 minutes until tender. Drain.
- Heat 1 TBS cooking oil in large wok or a large deep skillet over medium high heat. Add in sliced marinated chicken. Season with black pepper. Cook until browned and fully cooked through about 5-6 minutes. Remove to a plate and set aside.
- Add an additional 1 TBS cooking oil to wok and heat. Add in chopped yellow onion and minced garlic and saute for 1 minute. Add in carrot sticks, shredded cabbage and bean sprouts. Stir fry for 2-3 minutes until tender crisp. Add in green onions and stir for another minute.
- Return chicken to the wok with the vegetables. Stir to combine. Stir in the cooked and drained chow mein noodles and sauce until everything is combined. Enjoy.
