Chocolate Cookies with Fudge Center

Chocolate Cookies with Fudge Center

Ingredients

  • 1 cup crisco vegetable shortening
  • 1 cup white granulated sugar + extra sugar
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1 tsp vanilla
  • 1 TBS water
  • 1 tsp salt
  • 1 tsp baking soda
  • 2/3 cup unsweetened cocoa powder
  • 2 cups flour
  • 1 jar hot fudge sauce

Instructions

  • Using an electric hand mixer, cream together shortening and both sugars.
  • Add eggs, vanilla, water, salt, baking soda & cocoa powder. Mix well using hand mixer.
  • Add flour one cup at a time and mix on med low until combined.
  • Cover with plastic wrap and refrigerate for 1 hour.
  • Preheat oven to 400 degrees. Line cookie sheets with parchment paper and set aside.
  • Using a 1 1/2 inch cookie scoop, place one scoop into the palm of your hand. Form into a ball and then flatten into a disk shape.
  • Place 1/2 teaspoon of fudge (I refrigerated fudge to make it more solid to use) into center of disk. Form dough disk around fudge and roll into a ball.
  • Place dough ball into a shallow bowl of sugar (1/2 cup) and roll to cover.
  • Place balls onto prepared sheet pan about 2 inches apart.
  • Bake for 6-8 minutes until cookies are set on the top and some cracks show up on top of cookie.
  • Let cool on baking sheet for 1 minute and then move cookies to cooling rack. Enjoy.
