Classic Tomato & Cracker Salad

Equipment

  • cutting board & sharp knife
  • large mixing bowl
  • tongs
  • small mixing bowl
  • wire whisk
  • measuring spoons & cups
  • medium pot or other cooking vessel for boiling eggs
  • serving bowl

Ingredients

  • 4 large eggs, hard boiled, peeled, & chopped
  • 4 medium roma tomatoes, diced & drained
  • 1/4 medium green bell pepper, diced
  • 4 green onions, sliced (white & green parts)
  • 1/2 cup shredded cheese (cheddar or other salad cheese)
  • 1 sleeve original saltine crackers (around 40)

Dressing

  • 1 cup mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  • Prepare hard boiled eggs using your method. Peel & chop eggs.
  • In a large mixing bowl, mix together eggs, tomatoes, bell pepper, onions, cheese.
  • In a small bowl whisk together mayonnaise, salt, black pepper, garlic powder, & onion powder. Pour over ingredients and mix well to combine.
  • Crush in crackers roughly. Mix well to combine. Enjoy!
  • NOTE: If you are chilling salad before serving, leave out the crackers and add them right before serving to keep them crunchy.
