Cowboy Casserole

A delicious and easy casserole filled with flavored ground beef, veggies, cheese, topped with tater tots baked until crispy and golden brown. A hearty dish.

Equipment

  • large deep skillet
  • 9 x 13 baking dish

Ingredients

  • 1 lb ground beef
  • 2 TBS cooking oil
  • 1 medium onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 tsp minced garlic
  • 1/2 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 2 cups corn
  • 1 (14oz) can pork and beans with juice
  • 1 (14oz) can diced tomatoes with juice
  • 1/3 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 (36oz) bag frozen tater tots

Instructions

  • Preheat oven to 375 degrees.
  • In a large skillet over medium high heat, bring oil to a sizzle. Add chopped onion and peppers, season with a pinch of salt & pepper. Saute until softened.
  • Add in ground beef and cook until no longer pink. Drain excess grease.
  • Stir in garlic and seasonings (chili powder, ground cumin, salt & pepper) for 1 minute. Add in corn, pork and beans, diced tomatoes, sour cream and 1 cup of the cheese. Mix until cheese is melted. Turn off burner.
  • Pour mixture into a 9 x 13 baking dish and smooth evenly. Top with rest of 1/2 cup of shredded cheese. Top with tater tots to cover the cheese & mixture entirely.
  • Bake in preheated oven for 20-25 minutes until cheese is melted, mixture is heated through and tater tots are crispy.. Enjoy.
