Cowboy Casserole
A delicious and easy casserole filled with flavored ground beef, veggies, cheese, topped with tater tots baked until crispy and golden brown. A hearty dish.

- 9 x 13 baking dish
Ingredients
- 1 lb ground beef
- 2 TBS cooking oil
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 tsp minced garlic
- 1/2 tsp chili powder
- 1/2 tsp ground cumin
- 1/4 tsp black pepper
- 1/4 tsp salt
- 2 cups corn
- 1 (14oz) can pork and beans with juice
- 1 (14oz) can diced tomatoes with juice
- 1/3 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 (36oz) bag frozen tater tots
Instructions
- Preheat oven to 375 degrees.
- In a large skillet over medium high heat, bring oil to a sizzle. Add chopped onion and peppers, season with a pinch of salt & pepper. Saute until softened.
- Add in ground beef and cook until no longer pink. Drain excess grease.
- Stir in garlic and seasonings (chili powder, ground cumin, salt & pepper) for 1 minute. Add in corn, pork and beans, diced tomatoes, sour cream and 1 cup of the cheese. Mix until cheese is melted. Turn off burner.
- Pour mixture into a 9 x 13 baking dish and smooth evenly. Top with rest of 1/2 cup of shredded cheese. Top with tater tots to cover the cheese & mixture entirely.
- Bake in preheated oven for 20-25 minutes until cheese is melted, mixture is heated through and tater tots are crispy.. Enjoy.
