

Creamy Italian Grinder Salad
Salad ingredients, Italian meats & cheese, toss with a creamy grinder dressing. Perfect cool salad for spring & summer.
Ingredients
Pasta
- 16 oz penne pasta
Grinder Salad Ingredients
- 1/4 head iceberg lettuce shredded
- 1 pint cherry tomatoes, cut in halves
- 1/4 medium red onion, diced
- 4 oz deli ham, cut into strips
- 4 oz pepperonis, cut into strips
- 4 oz hard salami, cut into strips
- 4 oz provolone cheese, shredded, cubed or strips
- 1/2 cup jarred mild banana pepper rings, chopped
Grinder Dressing
- 1 cup mayonnaise
- 3 TBS red wine vinegar
- 1 TBS minced garlic
- 2 tsp white granulated sugar
- 1 tsp Italian seasoning
- 1 tsp salt
- 1 tsp black pepper
- 1/2 cup parmesan cheese, grated
Instructions
- Cook pasta per directions on package until tender. Drain and rinse pasta with cold water until cool.
- In a very large bowl, mix together the cooked, cooled & drained pasta with the Grinder Salad Ingredients listed above.
- In a separate medium bowl, whisk together Grinder Dressing Ingredients listed above.
- Pour dressing over salad ingredients and mix to combine well until all salad ingredients are coated with the dressing evenly.
