Crockpot Cheesy Bruschetta Chicken
A delicious crockpot/slow cooker meal with chicken, tomatoes, Italian flavors, cheese and Stove Top Stuffing. This recipe was inspired by a recipe off the back of the Stove Top Stuffing box with a few changes.

- 6 quart crockpot
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 tsp black pepper, DIVIDED
- 1 tsp garlic powder, DIVIDED
- 1 TBS Italian seasonings, DIVIDED
- 2 TBS dried mince onion, DIVIDED
- 1 cup mozzarella cheese shredded, DIVIDED
- 1 (14oz) can diced tomatoes with juice
- 1 (10oz) can rotel tomatoes with green chilis & the juice
- 1 (10oz) can cream of celery soup
- 1 (10oz) can cream of chicken soup
- 8 oz chicken broth
- parsley, for garnish
- 2 (6oz) boxes chicken flavor stove top stuffing or other flavor
Instructions
- Spray a 6 quart crockpot with non-stick cooking spray. Place chicken in one layer in bottom of crockpot.
- Season chicken with 1/2 of the seasonings listed (black pepper, garlic powder, Italian seasonings and minced onion). Sprinkle half of the mozzarella cheese over seasoned chicken. Pour boxes of stove top stuffing over cheese.
- In a large bowl mix together canned diced tomatoes with juice, rotel tomatoes with juice, both cans of cream of soups, chicken broth and the other half of the seasonings listed (black pepper, garlic powder, Italian seasonings and minced onion)
- Pour mixture all over the stuffing, cheese and chicken in the crockpot. Cover mixture with the other 1/2 of the mozzarella cheese.
- Place lid on crockpot and cook on low for 5-6 hours or on high for 3-4 hours until chicken is cooked through and tender. Garnish with Parsley, if desired. Enjoy.
