Crockpot Cheesy Chicken & Stuffing

Equipment

  • 6 quart crockpot

Ingredients

  • 2 lb boneless, skinless chicken breasts (4 breasts)
  • salt, black pepper, and garlic powder, to season chicken
  • 1 medium yellow onion, chopped.
  • 2 cups cheddar or other flavor cheese, shredded or sliced
  • 1/2 cup butter, melted (1 stick)
  • 1 (10oz) can Rotel (diced tomatoes & green chilies) mild
  • 1 (10oz) can cream of soup (celery, mushroom, or chicken)
  • 1 box Stove Top stuffing mix, I use cornbread flavor
  • 1 cup chicken broth

Instructions

  • Spray a 6 quart crockpot with non-stick cooking spray. Place chicken breasts into crockpot and season chicken with salt, black pepper, and garlic powder.
  • Top chicken with chopped onion. Top onion with shredded cheese.
  • Pour stove top stuffing dry mix all over cheese. Pour melted butter over stuffing. Top with Rotel, then top with cream of soup, spread evenly. Pour chicken broth across the top.
  • Cover crockpot with lid and cook on high for 4-5 hours or on low for 6-8 hours until chicken is cooked through and fork tender. Serve with favorite side.
