

Crockpot French Onion Beef Stew
Perfect Comfort Dish for Slow Cooker Month of October or Anytime
Equipment
- large deep skillet
- cutting board & sharp knife
- 6 quart crockpot/slow cooker
- non-stick cooking spray
Ingredients
- 1 1/2 lbs beef stew meat
- 1 TBS cooking oil
- salt & pepper
- 6 TBS butter, DIVIDED
- 2 large yellow onions, sliced thick
- 1 pkt au jus gravy mix
- 1 pkt lipton onion soup mix
- 1 (10.5) oz can french onion soup
- 1/2 can water
- 6 oz package shredded swiss/grueyer cheese (IDIVIDED)
- dried or fresh parsley for garnish
Instructions
- Season beef stew meat with salt & pepper on both sides.
- Heat large skillet over medium high heat. Add oil & butter and allow to sizzle.
- Place seasoned stew meat into hot skillet and sear meat until browned on bottom. Flip over meat and cook an additional few minutes until seared on all sides. Remove excess grease from skillet and allow meat to sear another few minutes until browned.
- Spray 6 quart crockpot with non-stick cooking spray. Place half of the sliced onions in bottom of crockpot. Evenly place all seared stew meat on top of the onions in crockpot.
- Place remaining sliced onions on top of the stew meat.
- Sprinkle packet of au jus gravy packet in crockpot on top of the onions. Sprinkle one packet of dry lipton onion soup mix on top of onions. Pour 1 can french onion soup over onions in crockpot. Fill can 1/2 way with water and pour into crockpot.
- Place 5 pats of butter on top.
- Place lid on and cook on low for 6-7 hours or on high for 3.5 – 4.5 hours until beef stew meat is tender and onions are browned.
- Remove lid and top with 4 oz shredded swiss/grueyer cheese. Place lid back on to allow cheese to melt. Garnish with dry or fresh parsley.
- Serve over mashed potatoes, rice, or pasta and your favorite vegetable.
- Serve with Take slices of french bread and butter them. Sprinkle a little swiss/grueyer cheese on each slice of bread. Bake in 425 preheated oven on a sheet pan for 7-8 minutes or until cheese has melted and is golden brown.
